Subject: Free Range Eggs

Does anyone else have a hard time getting free range and/or brown eggs to hard boil?

Does anyone know WHY this is?!

The fresher the egg the harder it is to set.

Yep.  Let them sit in the fridge for a few days first and it's a lot easier.

I once got a half dozen from a friend with chickens...followed normal practice...sat in the fridge for a week first...drop them in cold water, bring to boil, let stand 10-15 minutes...I let those suckers stand till the water actually needed re-heated...reheated it and they still weren't done!  Dang fresh eggs...they cooked like 40 minutes and were still soft boiled...

I've given up on hard boiling them....if i want eggs for my salad I stick it in a small container, scramble and put in the microwave!
