Subject: Raw eggs - sunnyside up?
In the back of my mind I tell myself that raw egg and/or runny egg yolk is not healthy but am curious about the reality of that. I know in years past weightlifters, etc. would basically drink raw eggs for the protein, but how unhealthy is it? Is it the potential for bacteria in the uncooked yolk? And if so, is the heat from the pan/griddle not sufficient to kill the bacteria if you're having them sunnyside up?

I'm curious since my son recently "discovered" sunnyside up eggs at a friends house and loves them that way. I've always liked mine scrambled and I've never given it much thought, but would welcome any feedback.

I'm not an expert on sunny-side-up eggs, but I believe that the yolk is still raw. Warm, but raw, so any bacteria in it would not be killed. There is a small (very small) risk of an egg being contaminated with salmonella, but I think the incidence is something like 0.003%.

I have no qualms about eating raw eggs--I eat cookie dough all the time, and I've eaten several things at restaurants that had barely warm, certainly raw egg in them--but I realize that deciding to take a certain risk for oneself is very different from deciding to take that risk for one's young child.

If you're concerned about the risk of salmonella, but still want to give your son sunny-side-up eggs, I believe that pasteurized eggs are available.

You can cook the egg on one side for most of the time, then flip it over for a few seconds. It won't be AS runny, but it'll be more cooked, which is better than nothing? I dunno - I've been eating raw cookie dough since I was little, and ate sunny side up eggs all the time as a kid and have never gottten sick.

Yeah, I know. But the kid might not If you don't leave it on the second side for very long, it's still pretty runny in the middle. I don't like my eggs super-runny so if I don't make them scrambled, I'll do them that way.

They also say the incidence for salmonella is 1 in 20,000 or 0.005% so the other response is in line (good recollection!) with what the FDA says.

I'd still go with it. I mean: You could get hit by a bus tomorrow.

I also noted that the FDA warning was generated from a 1988 incident. Hence, there hasn't been a noteworthy "outbreak" in 20 years. I agree the risk is non-zero, but so is the risk of being hit by falling space debris or spontaneous human combustion. I doubt any of these will happen to me (unless I become a drummer in a heavy metal band).

By cooking the white, you are reducing the chance of salmonella poisoning compared to raw eggs.  By cooking the yolk til it is solid, you are completely eliminating the risk.

One of my kids likes their eggs over easy to over medium.  No runny whites.  My other child likes fried egg whites, no yolk.  Hmmm.  I also cook my eggs in bacon fat.  Nothing compares to an egg cooked in bacon fat.  I keep a little jar of bacon fat with my cooking oil.

If you want your kids to like green beans, steam them then toss them in a bit of bacon fat.  MMMMM!

My daughter loves her eggs sunnyside up, so I just cover the egg for the last minute to minute and a half of cooking (usually only cooks for 2 1/2 minutes total) with a lid or tin foil, and it will heat up the yolk more. Still not cooked all the way through, though.

Ok...so what about poached eggs? I love poached eggs. Even as a child, I was always a big fan of soft-boiled eggs...but as an adult, I could never time them correctly to come out "just right". Hence, the reason I turned to poaching them instead...simply because you can see how done they are. But even still...I like the yolk in my poached eggs a tad bit on the soft side...so not totally solid, but not super runny either. Is it safe to eat them this way?

I'm pretty sure that regardless of how the egg is prepared, if the yolk is not completely hard you expose yourself to the risk of salmonella. Considering the risk is 1 in 20,000, I wouldn't be too worried about it, but that's me.

I really dislik eggs, which is funny because I eat about 1 dozen eggs a day or so.  I just eat them raw--put 4-8 whites (and maybe a yolk or two) in a cup and chug them.  I barely taste the eggs, don't have to cook them, and still get their nutrition!  The ordeal is over in about 4 seconds, versus a whole meal if I had to cook them.

 

Everyone makes fun of me but hey, none of them need to consume 4000 cals a day to survive

Yes, but doesn't the fda recommend pretty much over cooking everthing, ie:
poutry - >165 (possibly doable for dark meat, but will give you dry and tasteless breast meat
beef - >145 (med to med well, blehk)
ground beef - > 165 (well into shoe leather territory)

As for eggs if your worried, suppossedly there are pasturized eggs available.  Never seen them myself, but have never looked for them, but the fda and Alton Brown say they are so they must be.  Couldn't even begin to guess how much they'd cost.

You can also buy pasteurized eggs which undergo a heating process that kills the bacteria but doesn't cook the egg (don't ask me how).

All this cookie dough talk...yum! I've eaten that all my life. And brownie batter...yummmmy!

As for soft boiled eggs, I got this at Williams Sonoma.

I eat egg creams for breakfast all the time and don't think much of it.  I think the odds of getting sick from it is slim enough to not worry to much about it.  Not to mention that I love egg creams and do not want to give them up.
