Looking for a great Chili recipe you can make in the crock pot for Super Bowl Sunday.

Here is mine. It's a white chili. Would be easy to add chicken if you like.

1 red onion, diced
1 green pepper, diced
1 poblano pepper, diced
1 serano pepper, diced (optional - this will add some heat)
1-2 cloves garlic, minced
1 can green chilis
3 cans White Northern Beans, draned
4+ cups chicken or vegetable stock, depending on how thick/thin you want it
Cumin, Chili Powder and Salt - to your preference

Put all (raw - even the diced chicken if you're doing that) in a crock pot, set on "low" for 6 hours.
Top with shredded cheese or a dollop of sour cream.

Variation: To turn this into a white "tortilla" soup, add 6 or 8 corn tortilla strips cut into 1-inch strips. It will thicken the soup substantially, as the tortillas will break up. Add them in at the end (15 minutes before serving) if you don't want them to dissolve.

3RD PLACE CHILI (2008) FIRST PLACE (2009)

1.5 lbs ground beef
1/4 cup chopped onion. (I did not measure this... just chopped up "some" onion. About half of a fairly large yellow onion.)
1 rib of celery, chopped. (A rib is just the middle part. I looked it up)
29 oz can of stewed tomatoes
2 cans of red kidney beans
2 cans of chili beans BOTH UNDRAINED. (15.5 oz a piece)
1/2 cup ketchup
1.5 tsp lemon juice. (I think I used more. Took a lemon and squeezed until it looked like enough)
2 tsp vinegar (I used white wine vinegar because that's all I had on hand)
1.5 tsp brown sugar
1.5 tsp salt (I used sea salt)
1 tsp Worcestershire sauce (I used one tsp and then sprinkled a lot more all over. I like the way it smells.. Shake. Shake. Shake the bottle!)
1/2 tsp garlic powder
1/2 tsp dry mustard powder
1 Tbsp chili powder. (I doubled this... maybe even tripled this with no effect whatsoever... when I made it this year, I accidentally dumped about half of the spice jar in... tried to scoop it out, but was not successful. Chili powder adds an "after the fact" zing)
2- 6 oz cans tomato paste

1) Brown ground beef, onion and celery in skillet. Drain. Place mixture in slow cooker. (I don't think I got all of the fat drained off. This was not a low fat dish...No one eats chili to lose weight anyway)

2) Add remaining ingredients. Mix well.

3) Cover. Cook on low for 8-10 hours or high for 4-5 hours. (Put this in the crock pot around 7:45 on Tuesday night and didn't unplug it until around 8 the following morning. 12 hours!)

I'm definitley going to have to try this one too.  I love doing the crock pot on Sundays and don't have nearly enough recipes!

It is healthier and tastes better.  I get mine at a local Whole Foods/Fresh Fields market.  We also have a local Buffalo farm.

You might be able to find it at a local health food store or a chain like Whole Foods, but failing that, you can buy it online.

Just finished and came out great!Thanks! I tweaked it a little by using two garlic cloves instead of the powder, and added some barbaque sauce to the 1/2 c ketchup.

Lisa - I've bought buffalo meat before at Kroger and Publix here in Atlanta. Ask the butcher if you can't find it. It's definitely yummy!

I made it yesterday as well...It was AWESOME. I used Bison as well. Couldn't tell the difference. Family loved it. Its in my receipes now!! Thanks Again.
