I can't seem to get my head around how much training some of my cycling and triathlon friends and also people on this site and not get run down or sick.

Seems after every fairly big training week or period of weeks I do, I get really tired. What do you do to keep the energy levels up?

Rest and proper nutrition are a good start.

I train pretty easy.  That way I'm not beating myself up all the time.

Don't worry about what other people are doing.  Just stick with your own plan, take care of yourself (recovery, nutrition, sleep), adjust your plan as necessary (to avoid injury and illness), and be consistent.  Fatigue is ok, just make sure you recognize it and take a couple of easy days to 'unload' it.

I think I am blessed with a good immune system. I haven't been really sick for a very long time. I get a cold about once every year or two, and it lasts for a day or a day and a half. Last week a friend and I were comparing our road rashes and though she had crashed a week and a half before me, my was healing more quickly. So I guess I'm just lucky and that keeps me from getting sick.

I know others who get sick often both with lots of training and a little amount of training.

personally, I think training helps keep me healthier than when I'm not training. Of course, I'm also one of those people who just get's a high temperature and "sweats out" most sicknesses, so I think heavy exercise with elevated body temp and lots of sweat simulates how my body fixes itself naturally.

Then again, maybe I'm just not training enough to get into a really weakened state.

Cut back the hours! Quality over quantity. Just b/c everyone else does it, doesn't mean it's right for you. I do ok for an old guy and can still run 6:30 pace off the bike for Sprint and OLY - win my AG and blah blah blah. I average 10 hours a week and many guys that I can beat often out train me by DOUBLE. So, it's not about how much you train, but HOW you train. ;-)

I am sure it is not the norm, but my case is odd. I do not get sick often (maybe once a year) and that ussually has happened when I am taking a few weeks off from training. Maybe it is my body catching up, but I have yet to get sick while in training mode.

How much sleep are you getting? I'm trying to get 8 hours per night but I find it much harder now then when I was younger. I notice the number of hours sleep I get correlates strongly to how much training I can handle and how my body reacts to it.

And nutrition of course. I eat completely differently now than I did before I started tri-training.

Besides the other great suggestions building your training gradually is key too. When I first looked at my IM training plan I didn't think doing the training amounts listed would be possible, but building up gradually worked out great and I managed to stay healthy.
