I was reading DC Rainmaker Garmin Forerunners review site and he used a Garmin 305CX (non-water proof) in his swimming cap to track the distance he swam in open water. My question is for those who have tried this? What did you use for keeping the watch dry? Several plastic bags and then tuck it under the cap?

Do you mean the 305 or the 405 cx?  either way I believe he uses a ziploc bag and puts it under his cap and favoring it to the side you breath more often....i feel if you are going to use it for accurate gps marking you should not bilateral breath....but if you only read his 405 article go back and read his 305 and I believe thats the one he talks more about it

I double ziplock mine and then put it under my cap.  It should sit towards the back of your head - think about what would be out of the water when you are facedown in the water.  It works perfectly for me!

It's the 405CX Touch Bezel.

Thank you for the information. I am going to put a Desiccant pack inside the double zipper bag with my Garmin and tuck in under my cap (crown of head). I will let you know how it goes.
