Subject: It's July 4 weekend, what's on the grill?

I know we have some bbq lovers around here.  Tomorrow is one day to kick the clean eating to the curb and enjoy.  I've got this baby ready to go in the smoker for a good 8-10 hours tomorrow.

Tonight's dinner was pizza on the grill.
Tomorrow will be burgers.
Monday will be a ginormous slab of top sirloin that hubby will smoke to perfection.  Can't wait.

We did our big dinner last night. My BIL and I cooked for 15 people. Started with homemade potstickers with dipping sauce. The main course was grilled salmon, which many said was the best they had ever eaten. Sides included roasted red potatoes, a massive grill basket of veggies, a few cold salads and asiago bread. Quite a nice meal.

Oh I so want to try a brisket...

I'm doing ribs on the ceramic cooker/smoker.   Dry rub (Dizzy Pig)  has been on for 24 hours, I'll throw on the grill for a 3-4 hour cook.  I'm using apple and hickory wood for the smoke.

For 4-5 lbs of chicken mix in a bag:

  • 1 tablespoon curry powder
  • 1 tablespoon chili powder
  • 2 teaspoons cocoa powder
  • 1 teaspoon adobo powder, without pepper, you can find it in the ethnic section of most grocery stores
  • 1 teaspoon ground cumin
  • 1 teaspoon hot smoked paprika

mix and add chicken to get it all coated, let sit for about 30 minutes and grill

Cherry is good on anything pork so don't worry.  You could go just cherry or if you like the flavor of hickory, toss some in as well.  I'll usually do pecan and apple when I'm smoking ribs.

 

As for rub, this is what I went with on the brisket...

black pepper, white pepper, sea salt, ground coffee, cayenne, chili powder, garlic powder, onion powder, brown sugar

 

Ok, time to go run so I don't feel as guilty once I start putting some hurt to that brisket.
