Subject: Holiday Leftovers?

What's your week of leftovers looking like? Got any recipes to share?

Tomorrow's the last day of turkey and fixin's for us; the amount of gravy I just put on my meal could and probably should be prosecuted under an obscenity law.

Then it's turkey veggie soup from the carcass, with cream-of-wheat dumplings. We also have bacon-and-shallot-stuffed sausages (wrapped in bacon), and later we will make a traditional (German and Nordic) split pea soup with bacon and served with sausages. Always on a Thursday.

Today's lunch was funny - all leftovers.

My sister and I were eating black bean/zucchini tacos, while my brother put the taco filling on spaghetti noodles. We were all dipping corn chips into cold tortilla soup, and the kids were eating ham sandwiches and Funions (the Funions go on top of green bean casserole, of course).

The black bean tacos were pretty amazing... goes something like this:

Black beans (canned, drained)
Zucchini (lots)
Kalamata olives
Garlic
Onion
Salsa Verde
Cumin, coriander, salt

Sautee all of that and serve in warm corn tortillas.
Vegan and gluten free.

We have ham, meatballs, lefse, resettes, krumkake, sweet potatoes, pecan and apple pie, and herring. I think we have at least four day worth. I love post holiday eating!

I wanted to ensure that we consume all leftovers this year so we had homemade lasagna, garlic bread and salad.  I'm pretty sure the lasagna will be gone by lunch tomorrow.  Was supposed to make apple pie but I wasn't feelin' it, maybe tonight.

Looking at the Gladware full of gelatinous gravy in my fridge, I am disgusted.  Don't get me wrong, the food tastes great...but I am sooo done with mega-servings of food!

A little bit of everything:

Prime Rib, ham, mashed potatoes, cauliflower casserole (yum), broccoli salad, no-bake cookies, sour cream cookies, pretzel treats, oreo truffles, egg & sausage casserole, creamy, dreamy spinach and onion dip, and fruit salad.

Good for several days of hibernation with a serious cold to kick.

I was supposed to have a gazillion people over last night so I cooked 9lbs of brisket. (Goes like this: Drizzle the meat with olive oil, season heavily with salt, pepper, garlic and onion powder. Throw on the grill and burn it until you think you've ruined it. Bring it in and put it in a large roasting pan (or other appropriately sized vessel) on top of a couple of coarsely chopped onions and crushed garlic. Fill the pan 2/3 full of beef broth and cheap red wine, add a bag of onion soup mix. Cook in the oven at 200 degrees for as long as you dare (I think ours was in there for 8 hours). Transfer to a crock pot to keep warm for serving. MMMM. This is seriously the best brisket I've ever made...

I also made a green bean casserole from scratch and oven baked new potatos. 

Of course 6 people didn't show so I have a metric ton of leftovers. I divvied it up into tupperware, labeled and froze it. I am thinking about making smash sammies out of the brisket...Yum.

I also made pancakes and waffles the last two mornings. Not worried about those...my 3 year old eats his weight in breakfast carbs every day.

Last night was left over Beef Burgundy. Hell, I make the stuff a couple days in advance just so it has time to soak into the noodles anyway

Tonight's gonna be prime rib (again) and the new cat will probably end up trying to beg some but get rebuffed. She's learning slowly but slowly. Then again, I'll probably sneak a couple crumbles into her bowl after I pick up plates.

Last night we ate the leftover appetizers and played cards with the kids. Chicken wings, mini turkey reubens, meatballs, hummus and veggies, sliders. Washed it down with several Yard's Brawlers.

I brought all of the left over cookies and pies into my work so I wouldnt be forced to eat them at home or even see them to get tempted. All I have leftover to eat is some ham and quinoa salad. But I did eat my fair share this week.

We usually give away quite a bit of leftovers to the extended family so are limited to only a couple days of turkey sandwiches, maybe one meal of traditional leftovers and a large casserole of Turkey Tetrazini.  I brought a whole turkey leg in for lunch today.  Mmmmm, turkey leg.

Last night we plowed through the leftover appetizers - bacon wrapped beef bites, spanikopita, crab rangoon, taco dip, chicken bruschetta toast and shrimp.  It was another bloat-fest.  One a positive note, I was right on my normal weight of 160 lbs at the gym yesterday!
