Subject: Superbowl Party Food Suggestions

I will be heading traditional Superbowl part and want to bring something new as my contribution.

Any suggestions for a good football party food?

I have made cakes, swedish meatballs, and chili in the past.

I was thinking bacon wrapped tater tots, but getting them there warm is problematic.  I guess they could stand up to being kept warm in a crock pot without a lid to keep them "dry".

Maybe Jello shots/jigglers?

Thoughts?  It can be sweet or savory.

Oh, and suggestions for veggie platters and such?  Keep them to yourselves.  This is the SUPERBOWL!

Empanadas!!! I make them with refried black beans, adobo chilies and cheese. The "healthy" ones have spinach, mushrooms and cheese. I made sweet potato and plantain ones for NYE this year and they were tasty. It's best if the dough is homemade, but I totally cheated the last few times and used puff pastery.

That's a thought.  Someone brought something like that to a party of mine, and I have a lot of puff pastry in the freezer...  hmmmmm

empanadas are the BOMB!!!!!! especially with chimichuri.  cr@p, my mouth is all wet now.........

um, for superbowl I usually do wings from hooters jsut cause it's an excuse to get wings from hooters, but that is of no help to you.

Another one of my favorites is bacon wrapped jalapenos.  Jalapeno stuffed with cream cheese (or cheddar) and wrapped in applewood smoked bacon.  Usually goes pretty quickly.  a variation on the same is add small chunks of chicken marinated in Italian dressing in there with the cheese and jap.

My wife likes to do sausage rolls: sage pork sausage wrapped in puff pastry cut into bite sized portions.  she gets requests for these on a regular basis from coworkers.

Cake balls (as I call them) or pops as others on COJ have called them.  cake mixed with icing rolled into a ball and covered with your choice of white, milk, or dark chocolate.  stick s stick in it and you get the "pop".  can also put different candy crumbles (butterfinger, peppermint, heath bar, etc.....) on the outside.  another variation is oreo balls.  same concept though.

stuffed peppers: goat cheese stuffed peppers  (these peppers are samll red and shaped like a habanero but they are not habanero)

humus and pita chips

those are some of my favorites.

buffalo chicken dip

it is very rich and bad for you but it was great. 

 

4 boneless skinless chicken breasts, boiled & shredded

1 12oz. Bottle Frank’s Hot Sauce

2 8oz.  cream cheese

1 16oz. bottle Bleu Cheese or Ranch dressing

½ cup chopped celery

8 ozs. Montery Jack cheese or Cheddar cheese, grated

 

 

In a 13 x 9” pan, combine the shredded chicken with the entire bottle of hot sauce, spreading to make an even layer.

Combine the cream cheese and ranch dressing in a saucepan over medium heat until smooth.

Pour this mixture evenly over the chicken.  Sprinkle with chopped celery and then grated cheese.

Bake uncovered at 350^ for 30-40 minutes or until bubbly. Watch that the top does not brown. Let stand 10 minutes.

 

Serve hot or warm with celery sticks or frito scoops.

Paula Deen's Creamy Dreamy Spinach, Onion & BACON dip!!  You have to get Frito Scoops, it really is the best combo.  I usually mix the ingredients the night before and then bake right before serving.

I also make spinach pinwheels:

2 10oz pkgs frozen chopped spinach (thawed & squeezed out)

5 chopped green onions

1 bottle of real bacon bits

1 pkg of Hidden Valley Ranch Dressing (do not get the dip mix, get the dressing)

1/2 cup mayo

1/2 cup sour cream

1 pkg soft taco size flour tortillas

Mix all of the ingredients together (I usually mix everything but the spinach together first to get the dressing spread throughout)

Put the tortillas on the counter and spread a thin layer of the mix all over the tortilla and roll up jelly-roll style.  Do for all 10-12 tortillas.  Refrigerate overnight, cut each tortilla every 1/2 inch or so and serve.  They are addicting!  They really do taste better if you do them the day before since it lets all the flavors meld.

Alligator chili? I have an awesome recipie, but it's not getting posted to the general public...

I also made smoked tasso as a jerky once and it was a HUGE success. Depends if you have good smoker capbilities.

Well, it's hard not to take a suggestion from here, and I still might.  I could flip flop...

BUT, I have the ingredients for a Key Lime pie, so I might just make that.  I want to get rid of them and if I made it for myself, I would end up eating the entire thing in a day...  Something like 3000 calories.

I just picked up some really good hummus from Costco yesterday.  Put it with some crackers, and you've got a winner there.  You can tell everyone how hard you labored to make it.

I love cheating with the puff pastry. I can not make homemade dough to save my life. I'm going to try your version with black beans. That sounds good!

I think I'm gonna make Maple-Glazed Meatballs. It's a crockpot recipe that calls for using frozen meatballs -- easy!

They're cooked in ketchup, maple syrup, and soy sauce, with pineapples, a dash of mustard, allspice, and tapioca. Never tried them before, but they look good and fun. Not sure how I will transport them -- maybe just take the crockpot with me.
