Subject: Sriracha

It's been three days since I had a meal that didn't involve sriracha. I've had it in breakfast burritos, added to already spicy jambalaya, and squirted it on tilapia. Last night, I slathered a whole chicken in it prior to grill-roasting, and then used more sriracha to make gravy. I'm starting to think I have a problem.

Anyway, what's your favorite sriracha application? The smoky sriracha gravy was pretty amazing, but I suppose I should be asking about more healthy recipes. Has anyone tried it in a savory oatmeal? Could you make sriracha cookies?

I blend it with some low-fat mayo and use it for dipping: crab cakes, sweet potato fries, etc. You could substitute greek-style yogurt for the mayo, too, I suppose. I understand the hankering for the taste and spiciness.

It's pretty darn awesome for lots of things. I use it in stir fries and marinades (soy sauce, sriacha, fresh ginger, sesame oil)

If you want a truly bizarre application, you can try what a Tibetan friend of mine does:

Chilies or sauce on cookies (minimally sweet ones such as digestive biscuits work best); dunk in a mix of yak butter tea and Nestle 3-in-1, eat. 

In my former life wandering around China, I've joined him in this addiction several times. It does kinda hit the spot on a cold day after hiking in the rain for a few hours, but the yak butter component is definitely an acquired taste.

Personally, though, I prefer mine on gyoza, in stir-fries, or on scrambled eggs.

My son made some low-fat Russian dressing with sriracha for fish cakes and fries It was seriously tasty. He's finishing up college for culinary arts, apparently this is a staple among his classmates.

My number one condiment as well.  I try to hide the ketchup from my wife.

My favorite lately is: white fish on sale + Sriracha + lime juice + onions for a quick civeche.

At my part time, they sell peanut butter cup cookies, or as I call them, "The Diabeetus", and they are the most delightful thing on the face of the earth. I've started dribbling a little sriracha on them. It's decidedly different but not unpleasant.

I try to mix it up.

I have a hot sauce trio of SriRacha, Tabasco Chipotle, and Cholula.

This does not include wingsauce (awesome dip for chili-lime grilled shrimp), or any spicy Indian curries or chutneys from my Mother-in-law. It is good to not rely on the same flavor profile.

 

Now that I am done with my blasphemy, mix a little in some dipping sauce that matches your dumplings of any kind - dim sum style, empanadas, you name it.

Spice up your sandwich with a sriracha aioli  1 teaspoon of sriracha to 3 teaspoons of mayo.  It's enough to kick up your sandwich without drowning out the star of the sandwich.  Lately it's been canned salmon for me. 

 

Sriracha on eggs one of the things that gets me out of bed in the morning.
