Wow, thanks for all the replies!  I wont get an opportunity like this very often, so I really want to go somewhere that will be a great place to train and also have fun.  Would love to hear more suggestions.  Here is some more info on my situ:

- My 3-4 consecutive weeks off is not for another 6 months.  Our first child is due in 1 week!  My wife will stop working, so her and baby Claire could be with me the whole time or just part... but I may have a hard time convincing the wife to go too far from home (like australia or hawaii, although wow... exciting thinking about that!).  We live in TX and somewhere within 2 days drive might be best.  

-I'm a definite scrub.  Just got back on the bike after 2 years off (wife grounded me until I impregnated her... ha!)  But, this year is my shot at a full IM.  Looking at B2B at end of Oct (which is usually flat & windy).  So, would love to go somewhere that I can log lots of bike miles but also run/swim.  And a location where my wife wouldnt be too bored when I'm training would be nice.

-Wife gets a little nervous when I ride on the road solo, so somewhere with wide shoulder or bike lanes would be a bonus (although not necessity).

-I've got a free place to stay in Keystone, CO... I'm just trying to find out if there are any routes that are fairly flat... not sure if that's possible since it's in the mountains... but looking into it.

So far I like the Florida suggestion, so gonna look into that as well.  Thanks for the help guys!

PCB are is pretty flat and pretty windy. there are a lot of bike paths and paved shoulders.

Damascus, VA.  Run the Virginia Creeper Trail to Abingdon, or mtn bike up to White Top or road bike through Back Bone-Shady Valley.  Beautiful area!!

I agree with this one. I spent a few weeks there a couple of summers ago, and loved the training. My wife and daughter had no interest in the sport, but had a fantastic time too. They'd return in a heartbeat if they could. Great swim groups (pool & OWS) to swim with all the time, fantastic running routes, and flat or hilly biking on your doorstep. Not sure why you're just seeking out the flats -- the hills are fun, and will make you stronger.

NOT northern Indiana!!!

Although it is always windy and very flat it's not particularly fun to ride for me, but it is home.  The scenery if extremely boring in my opinion and there's nothing for your wife and baby Claire to do.  (Although Claire will be mostly busy filling diapers and sleeping.)

I agree that a place that has mountains will help you develop power and strength.  With that in mind, and having never been there, I would say Boulder sounds like a pretty awesome place.

Just thought of another--Flagstaff, Arizona has some really nice rides and there are options which aren't too hilly. September might still be hot but I was there in July--okay as long as you wrap things up by 10 AM or so. Wasn't that impressed with the running but I don't think I found the best places. Could be combined with a Grand Canyon trip. Still, Eugene is better! I'm biased toward green place.

I am not sure I would consider Flagstaff flat, even though it kind of looks like it is.  But you are pretty much always climbing or descending.

Gulf coast of Florida.  Very Flat, fairly constant on-shore breeze.  this time of year (before June) the humidity is quite reasonable and water is warm enough for OWS in the ocean.

We did a family vacation on Sanibel Island and Captiva Island, FL last year and it was amazing.  Not to mention the open water swimming or, if you prefer, the 50M pool on Sanibel!  I HATE flat terrain and this is the only place I could see myself living and training full time.  The beach is stunning - sea shells like you've never seen!

To get there the flight is into Fort Myers.  In addition, it's totally easy to do day trips to the Everglades and weekends to the Keys!
