Subject: Help me pick out panniers and fenders...and cross tires

So, I bought a Surly Cross Check to take on an upcoming deployment.  I liked the durability of steel plus the ability to put cross tires on it for potential gravel riding.

I figure I can do workouts on slicks, but this will also be a commuter bike.

I want panniers/fenders....but I know nothing about panniers or fenders.

I looked at a few panniers in my LBS, but again...no idea what I'm really looking at here.  Basically I'm looking for something I could hang saddle bags from but that also has some way to secure a regular bag or box or whatever to the top for things that might not fit in the saddle bags.  A clip or bungees maybe.

For the fenders I just want something that is going to keep me from getting splattered on the way into work if it's raining.  Doesn't have to be complicated.

Now, tires...I want something with enough knob on it that I can ride on rough rock/gravel/dirt, but is "slick" enough that for everything but my longest rides I won't care about not swapping the tires for slicks.

I like this bag and rack set up.  Easy to slide and lock the bag on the rack quickly, and no bungees to struggle with. Can hold lots of stuff when you need to.

I had been eying the topeak racks. :D

It seems to say it fits bikes with disc brakes...that means it would also work with bikes with OTHER brakes (um, cantilever for example?) right?

That bag looks like it would hold everything but the kitchen sink! :D

I leave leave for the desert at the end of May.  But I head out to some pre-deployment training in a month.  I'm only home for about 10 days after my training is done before I head out the door.  Trying to make sure the bike is all good to go before I leave! :D

I did some touring last year and plan to do some touring this year. I found 32mm to be great. I could ride on gravel or a fairly decent speed on the road. I think I used Swabe Marathon's.

Oh, I used Orlieb panniers. Here's my setup. I use mountain bike pedals and these running shoes have cleates. I found them quite useful because they are easy to walk around in.

I'll give a suggestion to look at the offerings from Portland Design Works for fenders. It rains there a fair amount -- they know wet riding.
