Subject: Leftover ribs - WWCOJD?

Over the weekend I made some ribs for friends coming over, but I'm embarrassed to say that I cut corners from my usual process and they didn't come out great.  Good enough, but not as good as usual.  Also, we had some friends cancel at the last minute so I have 1 1/2 racks of ribs left.

I'm trying to think of something clever to do with the leftovers, but can't come up with anything.

Take the meat off and use it for tacos?  I do that with lots of leftover meat.  May have to add some sauce to keep it from drying out, but they are usually very good.

Lately, all meat goes on top of the salad I"m having for lunch or dinner.  Rib salad.. never heard of it but I would try it for sure.

pull the meat off the ribs, shred it if you can, then saute up some veggies - mix it all together - would probably be what I would do

I looked at this and first wondered "What are leftover ribs?" Wink

I'd go with the taco idea, use cole slaw in them as well. Or redneck nachos.

Exactly what Chris said.  I was all, huh? Wait, what?

What about throwing them into a roasting pan or a slow cooker with a little (more) barbeque sauce and some onions and converting them into pulled-pork?  Eat em as pulled pork sandwhiches?

Anything wrong with them?  Cut corners how?

A little BBQ sauce fixes most "rib issues".  But if you cut corners in cooking and they are tough my first instinct would be throw them in a slow cooker and let them go for another 4-6 hours on high with some BBQ sauce glaze.

Pull it off the bone and either shred it or dice it depending on the consistency. Then add a mixture of apple cider vinegar and red pepper flakes. Serve it on a whole wheat bun and top it with cole slaw and pickles. Maybe a dash of your favorite bbq sauce. You can thank me later.

Did you sauce them? (please tell me no!! )  If not....throw them in a crock pot with some saurkraut.  When you get home mash up some potatoes to go with them.

I ended up throwing them in a crock pot with some apple juice, honey and brown sugar (basically making up for the step I skipped) and they came out much better.  Lesson learned, don't cut corners next time!
