I have given up cooking while car camping except for boiling water.

If you are camping relatively close to civilization, you can usually get pizza delivered. There is also usually a microwave in the camp store. Sometimes even BBQ grills.

BBQ grills are a solid choice if available. Pizza delivery is kind of cheating IMHO. If all else fails and you hobo dinner is ruined by coals to hot and a disaster you gotta do what you gotta do but I wouldn't make that my first choice.

If you have the option. Try to catch fish if a lake or river is nearby and if not then have a ready to go plan b.

My family and I are going camping in a few weeks and taking this approach. Hopefully it's a fish dinner.

Lately I've been cutting up veggies (zucc, squash, onions, etc.) beforehand and letting them marinate in a zip w/ olive oil, balsamic, garlic, and other spices. I then use a grill wok over the fire. I've also been grilling steak, marinated chicken and portobello mushrooms. Hot dogs on stick, smores and jiffy pop are typically reserved for later on...after a number of beers.
