The family and I will be moving from Winona to Plymouth in about a month. Can't wait to get active in some tri communities in the area and do some swimming. What lakes are good for swimming in the area (few or no boats, not weed choked, etc)?

Welcome!   Will you be commuting for work elsewhere in the city?

Maybe some people in your area can chime in on other options, but the best lake situation for swimming is at Nokomis.    Worth the drive, I think.

Here's the detail on open swims:  https://www.minneapolisparks.org/activities__events/water_activities/classes_lessons__clubs/

Basically they let you swim across the lake with lifeguard support, which is otherwise illegal.  One time per week is free (Tues 5:30-7:30) and if you join the club you can also go Thursdays 5:30-7:30 pm and Sundays 9:30-11:30 am.   Really, you cannot beat this for open swim practice. You also get to swim in a pack, really practice sighting, etc.    At least try to check it out.

Wife got a job in Elk River and we will be living in Plymouth. I've done real estate for 18 years so I will probably do that once we are moved in around the Maple Grove/ Plymouth area. I plan on joining a tri club and gym to meet people with like minded goals. Medicine Lake and Parkers Lkae look to have swimming beaches. I will have to look into Nokomis Lake.

I know I have heard of MN BTers swimming in Medicine Lake.  For the most part, I find swimming in any lake with a public beach acceptable.  Very few have lifeguards, though.  Just swim within the boundaries of the swim area so you don't get in trouble.   I just go back and forth from one end to the other, on the very edge.  I find some lakes to be more popular and you have to contend with recreational swimmers/people playing in the water.  The good thing is it's good practice for OWS

Our Wild River Triathlon Club has regular Wed night swims at Perch Lake just north of Hudson, WI during summer.  Its not quite Plymouth but its a fantastic lake for training.  Welcome and good luck!

Lots of folks in the east metro swim at Square Lake north of Stillwater. Very clean and few to no boats depending on day and time.
