Subject: Favorite slow cooker recipes?

OK, I'm at a loss.  We have two crock pots and will be getting a roaster from the MIL for Christmas, but I have no clue really what to cook in them.  I've only ever used them for cooking beans and rice, and for keeping things warm.

What are some of your favorite uses for your crock pot?

For party food - take one pound of brown sugar and four lite keilbasa or similar sausages.  Slice the sausages, dump them and the sugar in the crock pot and let it cook all day.   Not one of my healthier recipes (notice the LITE sausage?) but yummy.

oh the possibilities are endless!  Pork roast, chili, beans, soups, stews, lasagna,chuck roast,....

google or go to Foodtv.com and you'll come up with a lot.  Just throw the stuff in and let 'em cook all day. 

Cooking Light just did a cover article about crock pot cooking.  I think I have it somewhere....

I made the best pot roast in my slow cooker. The recipe is here.

I substituted beef stock for the water and added a little bit more veggies. It turned out so delicious. Next time I cook it, however, I will add 1/2-3/4 cup red wine to replace some of the broth to brighten it up a little bit. My boyfriend had a big portion of it and then went back for seconds! So good!

Also easy, and one of my favs is to just dump some short ribs and some bar - bq sauce into it and cook for about four hours on high. Great to have fall-off-the-bone pork ribs like that in the winter when girlling is tough.

Try the "Fix-It-And-Forget-It" cookbook dedicated to slow-cooker recipes. I've made some really delicious meals that way.

Here's another fast and easy recipe.  Brown a package of stew meat and layer it in the bottom of the cooker.  Add cubed potatoes (I used six small 'gold' ones), a cut-up onion, a couple handfuls of baby carrots and some celery (I used two long stalks).  Cover with a can of cream of mushroom soup and sprinkle with a package of Lipton's onion soup mix.  Cook on low all day and you've got a great stew.

Now, while my Mom is the queen of the 'throw it together' style of cooking - you know the kind, you throw whatever you have in a pan and it comes out great - I've never had the knack.  I grew up on some great soups and stews but have never really been able to make the 'like Mom used to make.'  This stew ended up being really good and is a super winter comfort food.

I get a london broil, some Lipton French Onion Soup Mix and water...throw them all in and let it go. Slice it up and put it on a Frech Roll. Its awasome.

crock pots are the easiest way to make a chicken by far.

(1) buy chicken
(2) put chicken in crockpot
(3) turn crockpot on
(4) come back in 6-8 hours.

voila!! easy-peasy. make some veggies for sides and you're all set.

Sometimes I spice it up and throw a half a lemon and some fresh rosemary in the cavity, but it's not necessary. Also, you can stuff the bird this way if you want, and it'll cook through without drying out!

I've also done beef roasts with roughly cut up potatoes, carrots, and onions. A little worcestershire sauce and some black pepper with that is amazing. This weekend I'm going to do a pork roast with onions and cranberries, with a little beer and broth to cook in.

I go mountain climbing and skiing, so I'll throw one of these easy meals in the pot in the morning before we leave, and when we get home - tired, sore, and famished - there's a hot, hearty dinner already waiting!

just posted this in the breakfast thread, but since its a slow cooker recipe... here goes, (from fellow BTer, mosc11)

2 cups brown rice (long grain slow cooking kind) or you can use barley, steel cut oats... experiment!

5 cups liquid (I use 2 cups juice, apple or cranberry (I’m sure anything BUT OJ would work) and 3 cups water.  You could use all water but I don’t think I would use all juice)

2 cups cut up apples (I have just used apples, just used pears and used a combination of the two)

2 cups dried fruit (whatever floats your boat on this, raisins, cranberries, dates, apricots blah blah blah)

1 tsp cinnamon

1 tsp vanilla extract

1 tsp nutmeg (not necessary but I like it)

you throw it all in your crock-pot on low overnight (overnight for me is about 6 hours).  Try the recipe first when you can watch it so you don’t have a burnt up mess when you wake up and no breakfast, if you do, just turn around and go back to bed.

Anyway, it comes out as a delicious hearty oatmeal type thing.  I do a big batch and keep it in Tupperware in the fridge and then heat up a bowl at a time.  I put honey and crushed almonds in mine but I have also heated it up and poured some vanilla soy milk or yogurt over it.   It has lots of fiber, low in fat and high on taste.

and i've done chicken in my crockpot, it comes out very juicy - and the broth that collects in the bottom of the pot makes EXCELLENT gravy!
