I made these today for my mom's birthday and they turned out great....just thought I'd share. They're suprisingly healthy - good carbs, lots of protien, and healthy fats.
mix:
1 cup whole wheat flour
1/2 cup 7 grain breakfast cereal
2 tsp baking soda
1/4 tsp salt
(if you want it
)
2 tbs brown sugar or honey
1/2 cup chopped nuts
(if you want 'em, but chop 'em fine or they'll stick
)
then throw in
1 cup soy or skim milk
5 tbs olive oil
(trust me, it tastes great
)
Lastly, separate 2 eggs. Add the yolks to the batter or throw them away of you're not too hot on all that cholesterol. Beat the whites until they get firm
(but not dry
) and fold them in to the batter right before you cook the waffles. These help keep the batter light and fluffy, even though you're using some heavy grains. Good luck.
I dressed them with a Mango Strawberry Compote:
cut one ripe mango up into small pieces
(the softer and riper the better
)
Thaw 1 1/2 cups frozen strawberries and mix with the mango bits.
add 2 tbs honey and 2 tbs maple syrup
then mash it all together somehow. Use a fork, an electric mixer, or if your mango is really firm, use the blender. Aim for an even consistancy.
Lastly, heat it up in the microwave and serve that shit!
