Subject: Quinoa

I just bought some Quinoa, knowing it's suppose to be really good for you. I know how to cook it, but what's the best way to eat it? Suggestions?

I love quinoa. Out of curiosity, what kind did you buy?

I really like it when it's cooked with garlic and chopped broccoli or squash.

I'll eat it with anything I would eat rice with (and it sort of has a rice-like feel to it when it's cooked, although finer). One of my faves is to actually top it with an egg over easy, break the yolk over it, salt and pepper ... mmmmm!

I don't know what kind I bought. I just bought about a cup from the bulk bin to see if I like it before I buy more. I like the egg idea. I'll have to try it for breakfast. Thanks!

Interesting.  I've only had it for breakfast, and I don't like it by itself.  I mix it with equal portions of steel cut oats and millet, and cook it in the slow cooker.  I add about 3.5 - 4 cups of water for each cup of grains, and it turns out ok. 

When I tried it on its own, I though the texture was a bit too weird for breakfast (IMO), but that it might make a nice grain-component for dinner.  I like your idea of using it as a rice substitute.  I might have to try that one night this week. 

When I have it for breakfast (in the mixture) I feel like it gives me this huge but steady source of energy.  It was the only thing I had to eat before my 11 mile run last week, and I had good energy through out the whole run.

this is funny! i just made it for the 1st time on friday. i got the Trader Joe's brand and used the stir fry recipie on the side of the box. I did cook it in chicken broth. i liked it. it's different. i don't think my husband was too crazy about it, but both my kids really liked it. you can use it as a substitue for rice or coucous.

1 cup of Quinoa
1 cup black beans
1 lb ground turkey
4 large bell pepers

cook the quinoa, black beans and ground turkey according to directions/liking. Mix a three cooked ingredients toghther. Cut off very top of the bell peppers and cut out the seeds. Fill each bell pepper with 1/4 of the mixture. Put bell pepper tops back on and either bake the bell peppers or throw them on the grill.

I'll try to remember to look for my recipe when I get home, but I have a super yummy one that uses purple grapes, lemon juice, olive oil, parsley and quinoa. It sounds strange with the grapes but it is really good - a bit sweet too. I got it out of the book: http://www.amazon.com/Raw-Food-Real-World-Recipes/dp/0060793554
I got the book from the library - it has several recipes on quinoa so it might be worth checking out just to get some ideas.

Here you go.  As a salad. Serve w/ chicken or pork.

1 cup uncooked Quinoa

8 asparugus spears

2 oz crumbled feta or goat cheese

1/4 cup green olives, pitted & chopped

4 tbsp chopped sun-dried tomatoes

1/2 tbsp olive oil + a drizzle for the asparagus

1 tbsp balsamic or red wine vinegar

s&p to taste

 
Cook Quinoa as per box directions. Drizzel asparagus w/ olive oil and roast for 10 minutes.

Chop asparagus  into bite size pieces & add to the Quinoa w/ cheese, olives, sun-dried tomatoes, oil and vinegar. S& P, stir and enjoy!

As someone else suggested, use it any time you would normally eat rice.  Say, with a Thai curry or some spicy red beans.  You can also use it in almost any grain salad recipe.  It makes a delicious tabouleh, for example.

I like quinoa - it's a good quality whole grain.

I don't get too fancy with it, but use it as the basis of my lunch a few days / week.

I mix 1/2 cup uncooked quinoa, 1.5 cups of water, some dried onions and garlic powder, and for some variety use one of the following:

a) a heaping tablespoon of Patak's curry paste
b) a few good shots of red wine vinegar
c) few shots of balsamic vinegar
d) a few squirts of concentrated lemon or lime juice

I nuke it in the microwave until all of the fluid is absorbed (15 minutes or so), then add some tufu and chopped veggies or sweet corn, garbanzos, etc.

I find these combos to be tasty and satisfying, and they keep me going when I postpone dinner and go for an after-work ride.

I like it as a salad.. prepare as rice then cool....  add EVOO, splash of balsamic, some small diced veggies - tomatoes, green onions,  squash or zucchini... maybe a bit of cilantro - chill then serve as a side
