Subject: Hummus
I just discovered that I actually like hummus. I was previously repulsed by the thought of eating it, and never tried it, but suddenly got a craving, and now I like it. (this same odd change in tastebuds has happened on previous occasions with tomatoes, pepper, grapefruit, and stuffing). Anyways, does anyone know a good, easy hummus recipe?

What Lara said, but add Tahini, 1-2 tablespoons. I think Tahini is sesame butter(like peanut butter), can often find it in the health food section of the grocery store. Hummus sounds great, Have to see if I can find Garbonzos over here, can't remember ever seeing them.

MMMMMMMM Hummus!! That stuff is great! but boy,,, the gas you get from it, LOOK OUT! lol Same with falafel. Falafel is really good with tahini too. hmmm I am hungry now, thanks guys! Jack ;-)

i have 2 great recepies.
i'm an israeli so i'm quite familiar with this dish since it is practicly our national food.
1)this recepy is a low fat one. its humus bean salad with spinach and coriander.
but the humus beans (chickpea) in water covered for the night.
wash them and boil them for 1hour or until they are soft (ready to eat).
take them out of the water wash them under cold water.
place the beans in large bawl.
now add to the bawl:
fresh coriander (one table spoon).
garlic
salt and pepper
spinach!!!very recomended :) fresh cooked one is the best.
white hard low fat cheese , like greek feta cheese or italian riccota cheese.
mix all of the ingrediants , you can add some olive oil.
2)thi recepy is for the best humus paste , if you want the recepy contact me since it is quite long . :)

i'm not in israel right now i'm a vetrinary student in budapest , i live here with my wife .
i forgot to mention that his is cold salad recepy.
if you would like some more humus recepies contact me , i have planty of those.

my recipe is a lot more complicated, so I won't share (unless you want it), but I wanted to say that Hummus is WONDERFULLY versatile, as well!!

Options:

Throw in a roasted red pepper to your food processor (you can roast them yourself or buy a jar pre-roasted)
Throw in some tumeric.
Throw in some italian (flat leaf) parsley to your food processor.
Try other herbs as well
Go for extra garlic!
Go for spicy... a little cumin and cayenne with your garlic.
I actually like the red pepper with the spicy. Nice combo.
Sun-dried tomatoes in the food processor. If they are packed in oil, throw them straight in. If not, soak them in water first to soften them up.

Ummm. Love it!!

Yes yes to all the ingrediants mentioned in the many replys. I also cut down on the amount of oil I use by substituting some of the water from the can of beans. It's a tad less thick but it still tastes great.

Garbonzo beans are nasty, IMHO. ;-) You can substitute black beans for a smoother, more pleasant texture. And you can subsitute peanut butter for the tahini paste.

1 clove garlic
1 can black beans (YUM!)
2 TBSP bean liquid
2 TBSP lemon juice
1 1/2 TBSP tahini (or peanut butter, obviously the non-sugar kind)
3/4 tsp ground cumin
1/2 tsp salt
1/4 tsp cayenne pepper
1/4 tsp paprika

Mince garlic, add ingredients in order and process until smoooth.

re: the garlic...

in order to get max flavor w/ less oil, before mixing it in with the garbanzos and tahini, i chop up the garlic and saute it in some olive oil making garlic flavored oil. the hummus ends up with a strong garlic flavor w/o the fresh garlic bite (or breath...well, sort of). i also add cumin and cayenne powder, sea salt, fresh ground pepper, lemon juice, and sometimes fresh italian parsley.
