Subject: All Veggie Beans and Rice All Veggie Beans and Rice This authentic recipe came from our Brazilian foreign exchange student. Unadulterated by myself, you will get a little taste of a Brazilian staple food. These people know how to eat healthy - just check out their people.  | INGREDIENTS: (2) White Onions, (5) cans of white kidney beans or navy beans OR beans that were soaked overnight, (3) cans of diced tomatoes OR (4) fresh diced tomatoes, (4) peppers - any color, jasmine or basmati rice, salt, (1/4 cup) butter. |  | 1) Dice onions. |  | 2) Sautee onions for 5-10 minutes with 1/4 cup butter in large saucepan (very emotional for me...I cried a lot) |  | 3) Dice peppers (and tomatoes if using fresh). |  | 4) Combine the diced peppers, beans and diced tomatoes to the onions. 5) Add enough water to render soup-like. (you will want lots of extra juice) 6) Salt to taste. 7) Bring to a boil then simmer for 1 hour. 8) Cook a large pot of rice (jasmine or basmati) 1/2 hour before done simmering. |  | 9) Serve the vegetables and beans on the rice. YEAHHH!!! Mega protein and carbs with a load of vitamins. Piece of cake...and mmmm! Your kitchen will smell soooo good making this recipe. |
