It might be a haul for you, but the riding North of Houston is great. I ride in the Magnolia / Plantersville / Anderson / Richards area almost every weekend. Once you get North of 105, it's ideal.....smooth pavement, okay shoulders, and very light traffic. You may come to a stop sign or light every 10 or 12 miles. You also get into rolling hills. There are a number of good loops you can put together...anything from 20 to 100+ miles.

What time of the day do you usually ride?  I need a good route and live up North, but can only get out once the hubby is home from work on Sat/Sun which is early afternoon.  I'm wondering how busy some of these roads get later in the day.
