When doing pool work how long do I rest betwen sets? such as today I do 6x500

Just a rule of thumb, use about 10-30 seconds to recover.  More time for the longer sets.  If you need more than 30", you are probably going to hard for that set.

Long, easy endurance sets you could use 20-30" between sets, short and faster sessions can use this too for recovery.

Short/medium-lengthed sessions focusing more on form and drills and are 'slower' you can do 10-20" rest intervals.

i use the 'workouts in a binder: swim workouts for triathletes'...and to echo what ron already said - 10-30. flipping through the book, the shortest is :10, and the longest is :30. for example, in the endurance 1 workout...

moderate pace: 300, :20 recovery interval, 200 :20 ri, 100 :20 ri
negative splits: 200, :25, 100, :25, 50 :25
fast: 200, :30, 100, :30
pull: 6 x 100, :25

muscular indurance 10

4 x 150 (100 build, :10 ri, 50 fast, :30)
300 kick
4 x 100 (75 build, :10 ri, 25 fast :30 ri)
300 pull

you get the idea.
