I bought Keo Look Carbon pedals when I bought my bike recently on the recommendation of the bike store. They are the first clipless pedals I have ever used. I have a tendency toward runner's knee but no current condition. The pedals don't seem to add any to my problem. I don't put in the kind of miles you do so my experience may not be applicable. I get maybe 120 miles a month. The tension is adjusted by choosing a different cleat. I have the gray cleat which is medium tension. Look also has white for looser and red for tighter tension. I have no problems clipping out quickly for emergency stops. Not much twist on the knee and I always clip out on the bad knee first for some reason.
Can't comment on those pedals specifically, but if you have knee issues then definitely go with something that has a good amount of float. Maybe more importantly, an experienced fitter can work with your cleat placement and various wedges to help take care of joint discomfort.
