Subject: RE: need recipe ideas Artichoke dip (I'll warn you-it's really, really good, but not so healthy ) 1 can artichokes, drained (I usually get the quartered, and even then, need to cut them a little smaller) 1 cup parmeasan cheese 1 cup mayo ~tablespoon of lemon juice ~several sprinkles of garlic powder The lemon juice and garlic powder cut the mayo taste, so it's really a taste preference on how much you want to add. I used light mayo last time, and it tasted just fine. Mix all ingredients. I sprinkle paprika on top to make it look pretty. Bake in smaller casserole dish (I used an 8x8 last time) for about 20-25 minutes, until starts to brown around edges. Serve with crackers or tortilla chips. It always gets rave reviews! *I'm pretty sure I haven't left anything out, I just made it. I'll try to double check and let you know if I missed anything...Have fun!
