First off, they force you to control your breath and don't allow you to take that extra breath the most people take when they grab the wall and then push off. I use to be very anti-flip turn, but then realized that in a pool environment, they are very useful. It allows you to be consistant and it also helps you to work your breath control. Things like exhaling underwater and "emtying" out your lungs before the next breath are exagerated using a flip turn. and the other byproduct, IMHO, is that you get faster because you can usually keep up with the faster lanes because the 'swimmers' are doing them and you can use them to really push yourself. I found that once I started doing flip turns I was able to stay closer to the people in the fast lane and therby push myself harder. And they just look really cool to someone watching.
