I think its a type of mushroom like thingy that they make look like chicken breasts.  I went vegatarian once for 6 months and survived on them.   You can find them in the health section of your grocery store...if they carry them.   Its also amazing what they can do with tofu these days.  We have a vegetarian chinese food restaurant nearby and they made the tofu to look like shrimp and pork.  With sauce it was hard to tell the difference.

I haven't seen those before - I'll have to look for them. Thanks for the tip! I use tofu and the substitute products, but I try not to use the processed ones too often. I've been scarred reading too much Jillian Michaels who is anti-soy. I made some power bars the other day using tofu and protein powder. They're pretty good.

Goal:2000-2200 calories / day, ~50% carbs, ~25% fat, ~25% protein.
Thursday Actuals:2281 calories, 51.41% carbs, 25.17% fat, 23.42% protein.

I made a few mistakes today. I splurged on a cupcake. Then I was really hungry today (it's a few days before my period, I'm always ravenous just before it) and ate a few bars. Right after I just said I don't like to eat many processed foods too!

I'll forgive you erin.  I had a fat out day yesterday.  My diet always seems to suffer by the end of the week when either there is no food in the house or I am left scrounging the cupboards to create some sort of meal.  Ate out twice yesterday and yes...my choices could have been better.  But the chicken piccata was sooooooo good!!!  Anyway...

Friday Actuals:1772 calories  (did pretty good considering)

I lost all track this weekend. I tried to get back on yesterday, but now I'm getting that bug that's been going around so I wasn't very hungry. At least I got my protein in. Seitan was on clearance at the grocery store Sunday so I stocked up and put it in my freezer. The one box I cooked, I just heated with some soy sauce and some Worcester sauce. It was delicious in my spinach salad!

Goal:2000-2200 calories / day, ~50% carbs, ~25% fat, ~25% protein.
Monday Actual: 1691 calories, carbs: 47.1%, fat: 22.4%, protein: 30.5%

I'm usually good through Friday, it's Saturday and Sunday that I tend to lose track. I'm not often near my computer so I don't track throughout the day and that always causes problems. Halloween being on a Saturday did not help this year! Normally my husband hands out candy and I go to the gym. By the time I get home, there's no candy left. This year it was around all day!

Monday Actual: 1875 calories, carbs: 49.12%, fat: 21.5%, protein: 29.38%

2 days in a row - low on fat and calories but high on protein. I'm ok being high on protein, but I need to get in more fat. At least it's over 20%, that's the minimum I want to hit. I actually feel better eating more protein, I don't feel as bloated or full as I used to after eating, it's very nice! I'm having pasta for dinner though, so we'll see how I feel tonight after eating that.

I started out so good but as the month goes on I seem to be settling back into old habits of not eating enough.  I am doing alot more strength training right now and my cardio is coming from swimming and the elliptical.   My energy levels are OK but I am looking to take my 22% body fat and turn down to 18% and I know it takes calories to burn calories!  Back to the force feeding!

That's what I struggle with too, my bodyfat % got really high because I was doing so much cardio and not eating enough which is hwy the nutritionist upped my calories so much. I'm been unreliable this week on hitting the calorie goal, but I've been sick too, so hopefully once I feel better I'll eat more again. I've been able to take in quite a bit though, and it's not all carbs so I'm happy with that.

Eek, stress is the worst! Thanks for the well-wishes. I don't think it's the swine flu, it's completely localized to my nose. It's coming and going now, but a few of us at work think it's allergies, because we all feel better when we leave here! I'm not sure what to make of that. I'm still not 100% and still taking it easy on the workouts (been sneaking in some runs, but keeping them slow) and I feel like a slug. The nutrition has been bad too - no dairy and not enough fat. Yesterday not enough to eat at all and now I'm starving today.

Well it looks like today is the last day of this challenge.  I will log today's total tonight.  Its been educational to say the least and I am going to continue logging what I eat and keep trying for this goal.  I have been feeling great with lots of energy.  This past summer I always felt behind the proverbial 8 ball. I am certain now that I wasn't eating enough calories, coupled with the fact I have never really been a competitive endurance athlete before. Gaining control over what I eat and the percentages was huge for me. I feel better prepared for next race season now.

Awesome! I am so glad you learned so much. I definitely have. I needed more protein and more calories (I wonder how I would have done if I have been eating right all along?) and I sitll need to get more fat in. I have also learned to eat before workouts and it is amazing. First my marathon, then I did a 50K this weekend. I woke up 3-4 hours before to eat. I hated doing it, but I felt so good during both and never bonked. Nutrition has been a huge limiter for me, so I am so glad to finally be figuring it out. I had no idea the challenge was ending. It was fun and I'm glad we did it and both learned something from it!
