Master 1548 Perth, Australia | Subject: RE: PT Freaks: Getcha Getcha Getcha Freak On! kaqphin - 2008-11-27 2:36 PM Yeah I as big on the 'from scratch' last year but after an entire days spent baking alone and then cooking a lot of christmas day I learnt! If you do things you can do in advance that will make a HUGE difference though... my problem was a lot of the stuff had to be fresh so I was my own worst enemy!!! Im doing Roast Pork on chrissie day and getting a Frozen turkey roll for the night before to have with salads and bread... easy!
That sounds really easy! I don't think it'll be that bad for me - the big things I have to make are the Christmas cake & pudding as well as the turkey on the day. My MIL will do the ham. Then it'll just be salads etc which shouldn't be too hard

Its the desserts and goodies that will take time... Pavlova which is best made on the day and cooled in the oven so the timing is really important to get the roast in on time! Tiramisu, Profiteroles for the night before plus Rocky Road, Truffles, Lolly Cake... but that will be the worst of it! I was contemplting also making some mini tarts too but I will buy the tart cases and the fillings (custard, choc mousse etc already made) so all i have to do is decorate! And my brother has just said he wants fudge and Lamingtons (although I might let him loose in the kitchen for a couple of hours nad let him make it himself) Im going to put the others in charge of drinks... and then I have Brunch to do as well but I cant decide what Im going to want.. apart from Champagne...
Apart from that I will just make sure I have bread, cheese, crackers, pate, nuts, chips etc on hand... because Im only having TWO meals chrissie day the rest is just grazing as you want... |

Just a few short minutes away before it's the official United States holiday of eating Turkey and being thankful, so what's Thanksgiving without a little Charlie Brown? Have a great night (day, too, to Super Cat and Magda) to you all! |

WOW! Your house sounds like dessert heaven on Chrissie Day!!!! I've never made a Pav from scratch - I've always just bought an un-dressed one from Cheesecake Shop and then decorated it myself. I've made meringues but have been to chicken to upgrade to a Pav! What is Lolly Cake? Truffles .... mmmm Lamingtons are a lot of fun to make but quite labour intensive and messy - I think thats a good idea to just leave your brother to it LOL. I bought a packet mix for fudge the other day and it turned out well. I can't remember if it was White Wings or Greens or other. And speaking of champagne (yum), have you seen those jellied flowers that you can add to your glass? I think they're called Hibiscus?

Lolly Cake is a New Zealand thing... it also gets called Eskimo log... its basically crushed biscuits, condensed milk anad melted butter with lollies in it (like marshmallows) made into a log, and rolled in coconut! Pav isnt that hard... and if it collapses a little you just put some extra cream on top and NO ONE can tell... I still say the homemade ones just taste so much better than the store bought ones... its just not the same!
Hmm no I havent seen the jelly flowers... sounds like something i should look out for... |

Lolly cake sounds divine! Heres a link to the flowers - I tried to post a photo but the work computer isn't letting me upload photos onto Photobucket http://www.wildhibiscus.com/shop/index.html You can get them in gourmet shops in Perth. I imagine Sydney would be much of a muchness.
