Hmmm.  We haven't chatted about food for quite some time.  I don't know why.  I think about it constantly.

 

 




I was just thinking about that last night. I'll let you all know if I come up with any good ideas for dinner tonight...


perhaps this....

Ingredients
1 (15 ounce) can black beans, rinsed and drained
1 cup cooked brown rice
1 small onion, finely chopped
1 egg, lightly beaten
6 tablespoons salsa, divided
1/4 cup reduced-fat sour cream
4 lettuce leaves
4 slices reduced-fat Cheddar cheese
4 hamburger buns, split


Directions
In a large bowl, mash beans with a fork. Add the rice, onion, egg and 2 tablespoons salsa; mix well. Drop by 1/2 cupfuls into a large nonstick skillet coated with nonstick cooking spray. Flatten to 1/2-in. thickness. Cook over medium heat for 4-5 minutes on each side or until firm and browned. In a small bowl, combine sour cream and remaining salsa. Place a lettuce leaf, burger, sour cream mixture and slice of cheese on bun.



That sounds really good, but I'm not usually allowed to eat beans at home If I ever get a weekend alone I will definitely try this out though.

That recipe looks fantastic and I "heart" black beans.  For burgers, I am usually lazy and nuke boca burgers, but I will give this one a try.  I think I have everything listed in the fridge/pantry.  They don't affect me that way.  Really, no they don't.  Wink

but i was thinking this recipe is sooo easy, why buy em in a box?!

i love me a black bean, and im always 'tootin' anyways what w all the fruits and veggies im eating, my family will hardly notice a difference.

Here's a quick Boca sammy.  Nuke a Boca burger (I like the flame grilled) and cut into small pieces.  Fill a warmed up whole wheat pita with the Boca crumbles and top with hummus, sliced cucumber and shredded lettuce.  Sometimes instead of hummus, I top with tzatziki (greek yogurt with garlic) sauce.  I make my own when I have time, but the grocery store has it where the hummus is sold.  Voila, veggie greek sammy.  Serve with a greek salad.  Yumm.

my friend that sent me the black bean rice burger recipe sent me another MUST TRY recipe:

BUTTERNUT SQUASH ENCHILADAS.

2 Large butternut squash
2 tablespoons cream cheese
1/2 teaspoon cumin
1/4 teaspoon ancho chili powder
1 tablespoon cilantro
2 tablespoons diced roasted chili peppers
1 tablespoons green onion, sliced
Pinch of salt
Four 6inch corn tortillas
1 cup enchilada sauce
1/2 cup shredded Monterey jack cheese

Halve the squash lengthwise and remove the seeds. Bake at 350 degrees
until soft, about one hour. Cool. Scrape out the flesh and drain in a
colander, using a few plates on top to squeeze out as much liquid as
possible. In a bowl, mix squash with cream cheese, cumin, chili powder,
roasted chili peppers, green onion, cilantro and salt. Taste and adjust
seasonings as necessary. Scoop the filling onto the tortillas and roll
them up. Place them seam -side down on an oiled pan. Cover with
enchilada sauce and top with cheese. Make sure the tortillas are
completely covered with sauce so they don't dry out. Bake uncovered at
350 degrees until the cheese melts and turns brown and the filling is
hot, approximately 15 to 20 minutes. Serves four.

MORNING GHOULIES.

inserted off day for me today....

teacher-parent conferences.  get to go hear how well my kids are doing and to hear how wonderful they are.....for someone else. 

j/k.  they're good kids all three of them.  and im so thankful that they're growing up well.

they BETTER.  i work hard enough!


in fact, speaking of kids, i was at the register at McDs (picking up Ghoulie orders) my kids unprompted by me used their manners to ask for an Icee - excuse me, may i please have a blue raspberry....thank you.

and the lady at the cash register said, 'its so nice to children who are parented well.  who behave appropriately.  who use their manners.  i see 'all types' here and most of the kids definately are not as well behaved as your children.  you can tell you spend time with them and teach them 'right'....

how nice is that??

they Know better than to act like WILD THINGS in public.

i was never opposed, when they were younger, leaving a full grocery cart in the store, taking them to a stall in the bathroom or out to the car and swattin' their WILD THING behinds or sending them to their rooms as soon as we got home.


im glad for moments like those.  makes when they act like Wild Things a little more 'tolerable'

they're 'coming around', parenting IS a lot of hard work and to do it 'well' it takes energy/time....but oh so worth it!

and golden when you get a compliment!


so its parent teacher conferences.  and then chiropractor appt in the middle.

and hoping that i dont lose my mind when my "well-mannered" children are underfoot.

they may be WILD THINGS, but they're MY WILD THINGS.

LOL.
