Noone cooks in NYC anyway!

I've just found the wonders of quinoa.  Not that I'd make it for a dinner party but as a staple it's fantastic.  I've been making all sorts of slop with it lately.  Last night, quinoa, salmon, asparagus in a chipolte sauce.  Weird but tasty!

Hey, I cooked for 9 years in this city, about 4 days a week. I love to cook. I just didn't have time anymore and now no desire. Quinoa is good depending on what it's with. Otherwise it's kinda flavorless.

I got home from swimming and I was beat so I figured I'd just have it. But seriously, how is 300 calories enough for anyone for an entire meal? That's just ridiculous!

well........................that all depends on weight, height, physical activity........don't get me started

Unless you are seven years old or eating 6 meals a day (which is a great idea) then it is far too little!  Especially for someone who doesn't need to lose weight as a recovery meal!

Hey, did the shoulder hurt?

OK, weekend cookoff in NYC.  I promise I won't make a weeknight slop meal.

What is one of the last meals you have made?

I cooked twice last week. I made a fish one night, sole. Had it with some veggies. Then I made a chicken breast with a bit of a cinnamon/chile spice, some almonds and honey. That was really nice. Chicken can be so boring.

Yeah, chicken is so boring.  I made tilapia the other night.  Crusted it with pecans and honey and then pan fried.  tasty.

So, cinni/chili go well together?  That sounds like fun.

Yeah, very good. I have actually made a bunch of spice blends. It's a fun thing to do. Well, before I had triathlon training

The easiest thing to do is to stuff split chicken breast with various ingredients and bake.  You know how split chicken breats have that little pocket?  Last time was a dinner party with good friends.  I stuffed the chicken with brie, shaved almonds, and cranberries (this was close to thanksgiving).  Then on the side was asparagus spears and three filo cups each with buttnernut squash.  One with a dollop of marscapone cheese, one mixed with bacon, and one mixed with scallions.  Oh, and first course was buttnernut squash bisque.  dessert was pumpkin martinis!

Mine's mostly basic. I used to do all this elaborate stuff, it takes too much time. I like simple things especially on weeknights.

Sure.  Of course the kitchen is far crappier.  But, we should have a good pre race pigfest!  Nothing too creamy or elaborate though!  We have to be light on our feet without rumbling tummies.

it's really funny, my oldest has been calling me for recipes

the thing is that I take most recipes as a base and then kind of 'do my own thing'

half the time I don't remember what I did, so it's been interesting to try and pass along recipes

LOL!
