Ann, you could just leave out the spinach and it would be sort of like pizza, although I highly recommend keeping the green stuff in. Tomato and Spinach Pie 1 Pie Crust 4 large tomatoes, sliced 2 TBSP Pesto 2 Cups shredded mozzarella 1/2 Cup Light Mayo 1/2 Cup grated parmesan 1 bag spinach, cooked and drained Bake pie crust and allow to cool completely. I usually do it the day before I make the pie. Combine mayo and pesto. Sprinkle 1 cup of mozzarella on the crust, layer tomatoes, pesto mix, and spinach on top a couple times and spread rest of cheese on top. Bake at 350 degrees for 20 - 30 mins until brown. Is great served warm, at room temp, and eaten cold for breakfast. ----- And yes, I realize I've deviated from our innuendo chat but I think there is a food allowance in the rules. I'll get back to the gutter shortly. |
