Hello RTMECS teammates!  I've been on challenge teams with most of you, some not for a long time, tho.  Great to be on such a chatty inspiring team

I'm Susan, live in Colorado where we FINALLY got some snow,  have 3 kids who are mostly grown and almost gone, have been doing tri's for 2 years, and am focusing on swimming and biking this winter.  I know the threat of tasers will keep me moving all month!  This will be fun!!

I just moved to PA in September, I commuted between PA and NE (that would be Nebraska, not New England) from February to September - still managed to squeeze in some training and a couple of races

it looks like we are going to have a great team

I have 3 kids, 2 in college and one in 8th grade

I hope I can be chatty inspiring this month, some stuff came up at werk the past couple of weeks that has taken priority

I'm training for a 1/2 Mary in Jan or Feb - going to do the race with Kristin (lazymarathoner), looking very much forward to it!

 

That sounds awesome! Its great that you can all meet eachother. Cat and I are seperated by several 1000 kms

Hi Judi - good to be back on a team with you - just be gentle with the taser

Tasering the folks who don't train...especially thse who say they're headed to the pool and forget it. 

I figured out most of my races for nex season tonight   Very happy with my plans.

 

Cool! What races are you planning, any big ones? Forget it if you've already answered this question, I am just working my way through the thread

I am *thinking* very heavily about doing a HIM in about 5-6 months time.

OK I'll do a little post padding and then I have to go because I have heaps of chores to do today. My fish are drowning in their own crap so I have to vacuum their home. I'm going to share some photos from my Christmas cake baking expedition on the weekend. I also made a Christmas pudding, I've posted those photos elsewhere so I won't repeat them, plus Phil was very skeptical about my pudding anyway LOL!!!

Here is a picture of all the dried fruit, peel and rind soaking in brandy in a big 10L tub.

Did I mention I spend $100+ on dried fruit, peel, nuts, flour, sugar and brandy for my 2 cakes and 2 puddings? $%%&%!!!

And here is the cake mix, mixing away. It is a combination of 1 lb butter, 1 lb dark brown sugar, 1 lb flour and 9 eggs. See I even converted it from grams to lbs for you

That brown colour is from the dark brown sugar. It has a beautiful molasses aroma.

Theres also some (actually, a lot!) nutmeg and allspice in there as well as some almond essence.

And here is one of the cakes (the recipe made enough batter for 2 cakes) after 5 hours of baking in a slow oven. I had to wrap in many layers of newspaper to stop it burning.

Now I just have to ice it so it looks something like this (I found this photo on the web). I think I need to put on a layer of jam and marzipan first, then so-called "plastic" icing. I prolly won't be adding the tacky little decorations LOL!

Yes! $100+ dollars worth of fruit!!! Have I already mentioned that? LOL!!!!

Yes there was a lot of fruit - when I added the cake mix to the fruit in that big white bowl, there was just enough cake mix to coat the fruit.

Its a really old hand-me-down recipe mum got from an old lady in Kalgoorlie, when we used to live there years ago. She's never made it so I gave it a go
