With all of my extra time and energy I actually cooked dinner last night!!! Cilantro-Lime Quinoa with Shrimp & Spinach Ingredients: 1 C uncooked quinoa 1/2 lime about 1/2 C cilantro, chopped 1 onion, chopped 1 clove garlic, chopped half a bag of baby shrimp salt and pepper to taste 8 oz bag of baby spinach Directions: Cook the quinoa. I used a rice cooker–simply put 2 C of water and 1 C of quinoa (rinsed!) in the rice cooker and flip the switch. Warning, it will NOT switch off for some reason. You’ll want to check it in about 15 minutes or so. I added a squirt of lime and a Tbsp or so of chopped cilantro so it could get nice and flavorful while it cooked. Saute’ the onion in a large frying pan until nice and soft; add the garlic; when it smells nice and ready add the shrimp (can be a bit frozen) and sprinkle with salt and pepper. You’ll feel super fancy if you use the fresh-ground. May need to add a bit of water. Squirt some more lime juice on there. Stir until the shrimp seems cooked through. Then add the spinach and cook until just wilted. Can also add some more cilantro if desired. By this time the quinoa should be done. Add that to the mixture, stir, and heat through a bit more. Voila! Erin's notes: use at least a full lime if not a tiny bit more, it could have used slightly more flavor... |

Am I the only one completely distracted at work. I am having a really tough time concentrating on my real job Real job? What is that? No, you are not the only one completely distracted. You'd think with all of this energy I'd have gotten something productive done here today. Instead I'm watching the weather out my window wondering if my swim is going to be rained out or not. |

If it thunderstorms with lightning, do they stop the race? For other sporting events, they stop until 30 minutes without lightning have passed. Would they do that? Could they do that on the bike course? And most of these storms roll in and right out. Do you just take your chances that you won't get struck by lightning? Of course, it's not going to happen May 21, that's why it's hypothetical. I don't know the answer to this, but I hate for it to get lost in the madness that is page 104. Plus I'd like to know the answer myself and this is a cheap way of padding my post count |

Figure I will ride the trainer as I am not really interested in a treadmill run and most likely they will close the pool if the storms continue. On a positive note I have purged most of the bad food in the house. Unfortunately my way of pruging was that I ate most of what was left. Next Saturday cannot get here soon enough! |

Of course, it's not going to happen May 21, that's why it's hypothetical. The answer is that it's very rare for the race to be canceled due to weather. It would have to be very, very extreme (anyone remember the pics from Boise 70.3 a few years ago? That one went off in pouring rain.) I've done IMs in the rain and even hail before. The only exception would be very high wind that makes the swim dangerous. |
