The bike course for IM Switzerland is pretty spectacular.

My wish list actually includes Ironman Pescara (Italy). A swim in the Adriatic and cycling in the foothills of the Abruzzo Mountains past vineyards is my kind of scenery.

IM Austria. Swim venue is beautiful, the ride is stunning, and the half of the run that heads in and out of Klagenfurt is great. The crowds are large and noisy. Klagenfurt is a wonderful place to visit.

Most of the big races in Europe sell out quickly ... so, I'm sorry to say,  you have probably missed the boat on a lot of them already for 2015

If your not looking for a IM branded race then the scenery in the Hardman in Killarney, Ireland can't be beaten. Its a smaller race with only about 100 participants so the ambiance scores low but made up for by the friendlienss of the organisiers and locals!

As every veteran athlete can attest, a non-existent or ill planned ‘race meal plan’ will leave you falling far short of your goals or even worse, in the medical tent.
