Subject: Turkey Prep Ideas
Was just having a discussion w/ my husband on the plans for the turkey (breast).
I picked up some Apple Cider to make a marinade using it, lemon, bay leaves, butter, garlic, etc....

He actually had the NERVE to suggest we just use a dry white wine!!!  Mind you we live in Utah (translation => long lines waiting to get into state liquor store the day before major holidays) and I already went to the liquor store tonight and picked up a Torrontes, Red Zin, and a Carmere.  I do already have a Chard here at home (but I think too sweet for cooking) However, it's my favorite and I will be damned if I am going to stay home w/ the boys and cook while he gets to opt out for the group Turkey Run and I not get to drink my favorite wine (and eat my favorite cheese and sausage while I cook).

That being said...

How will YOU be preparing your bird this year????

It's hard to beat a deep fried turkey.  I tried my hand at it last year and had a successful outcome (both in terms of the way it turned out and not burning anything down or blowing anything up).  I'll be giving the deep fryer another go this Thursday...can't wait!

He's going out to run and you are staying home to cook.,,,,,, hmmm, I say he doesn't get much of a vote as to how it's cooked,,,,,

That sounds pretty good for a marinade, the only thing I might suggest would be adding some salt to it. When I make marinades for poultry I usually use dried spices opposed to fresh. You could even throw in a little sugar. I often try different stuff just to see how it comes, usually not on the big Turkey Day though.

Yes, folks, that is a bacon covered turkey.  Word on the street is it helps retain moisture and is kinda self-basting.

I think that Mesquite would be strong for turkey.  I like Pecan, Apple, and Cherry.  I usually do a turkey roast since it's for just 2 of us.  When I do it for a larger party, I use a Turkey Cannon and fill it with white wine and rosemary.  It's like the larger size turkey version of beer can chicken.  I just smoke it till it gets to 157º, officially it's supposed to go to 165º but I'm afraid that it will dry out by then.

And coming from Texas, mesquite isn't too strong for ANYTHING :D

Mesquite wouldn't be my first choice for a turkey either. Going with apple this time, want to try pecan next time.
