Subject: Altering the training plans
I am planning on using the 26 week intermediate sprint plan but have a few problems Monday and Tuesday, on those days I will only have time for about a 1hr workout can I rearrange the schedule? And if I can is there an easy way to do it?

Basically using the 'move' feature in your 'planned training'

I would do the moving in weekly chunks, as your season unfolds - I wouldn't try to do the whole 26 weeks at once.  On Sunday, do the re-arranging for the next week or two - keeps it manageable.
