Subject: no instructions on how to start
I have spent almost an hour - there is no place to start unless I look up everything about each food - that is not the purpose of a log.

What exactly are you trying to do?  I assume it's about logging your foods eaten...

*edit...I think I know what is going on, in your log you have 'peanuts' in the general nutrition comments area...see the first tutorial to use the upper box to 'Add Meals' and foods from the database.

Assuming, like Ron, that you are trying to log nutritional data. ALSO assuming that you have successfully added a meal, and now you are in edit mode, adding foods.

When you search the food database, a list will come up with the foods on the right and an ADD button on the left. If you click on the FOOD NAME (on the left) you will get a screen showing you all the nutritional data and you can then add the food to your food list from there. If you don't want to see the info screen just make sure to click on the ADD button instead of the FOOD NAME. Then the food will just be added to the list, and you can update the quantity etc.
