I thought about that, but it's really hard to try to guess those ingredients. A lot of rolls (california, philly, rainbow, etc, etc ) are pretty standardized ingredients from what I have seen. It seems that jmcelroy's link has some good info on it. Seems like most of the rolls are pretty decent for you, so long as you stay away from tempura (aka fancy japanese word for fried).
