Subject: Rice recipes
 I'm looking for some good spanish or mexican rice recipes. For some reason success eludes me in this endeavor. My problem most likely stems from not using lard in my recipes, but surely there is a lower fat option that also tastes good. Garlicky flavor is a plus here.

make a rice bowl. i use rice, beans (black or refried), salsa, even some corn, a sprinkle of chedder chesse a dollup of [low-fat daisy] add some chicken (if you want) and boom! you have a meal with veggies, protien and carbs!

I make mexcian rice all the time...

Take diced red pepper adn onion and saute in a pan (use spray, butter, or oil..whatever)  Add chopped garlic and saute for a monet, don't brown.  Add rice (2 cups), 4 cups chickien broth, 1 tablespopon tomatoi paste and 1 teaspon cumin and salt.  Cover and cook for about 10 minute (until you see little pot holes in the top of the rice) Let sit covered, off the heat for a few minutes.  Toss and serve.

I also add black beans and corn after ot make a heartier rice.  And sometimes i will sautee some shrimp in olive oil, or grill skirt steak and slcie and serve iwth the rice, sliced avocado and salsa, sour cream...yum!  I love Mexican!

 My recipe is very similar except that instead of the 4 cups of chicken broth I use about 3 cups and 1 cup of canned tomato sauce and no tomato paste.  I've not added cumin but I'm sure that's great, I love cumin and next time I make the rice I'll add it.
