Subject: RE: Rice recipesI make mexcian rice all the time... Take diced red pepper adn onion and saute in a pan (use spray, butter, or oil..whatever) Add chopped garlic and saute for a monet, don't brown. Add rice (2 cups), 4 cups chickien broth, 1 tablespopon tomatoi paste and 1 teaspon cumin and salt. Cover and cook for about 10 minute (until you see little pot holes in the top of the rice) Let sit covered, off the heat for a few minutes. Toss and serve. I also add black beans and corn after ot make a heartier rice. And sometimes i will sautee some shrimp in olive oil, or grill skirt steak and slcie and serve iwth the rice, sliced avocado and salsa, sour cream...yum! I love Mexican! |
