Subject: Meat Thermometer quiz
Ok, cooking chicken for example they say to get at least 165 F internal temperature.  Going over tons of recipes for chicken, they say around 20-25 minutes at anywhere from 375 to 400 in the oven to bake.  You put the chicken in and after 30 minutes you check with the meat thermometer and it only registers 135, so you cook it 15 more minutes, same temperature.  You think you have a bad thermometer so you get a totally different, more expensive one just to find out the same temperature is around 135.  To make it more interesting, you take your thermometer to your moms for Labor Day weekend, cook chicken in different oven, same experiment, same reading. 

What gives?

Chicken frozen on the inside and taking a long time to heat? I never check with a thermometer, just color, so I'm not much good. Weird, though!

I guess I shouldn't had said quiz in the subject line... I'm at a lost here.  One would think its frozen, but these were fresh breasts.  I have been going by color and time for a long time now, but obviously according to "experts" the temperature has to be higher, which I cannot obtain with simple recepies.  anyway.... test it out sometime to see what I'm talking about.

x2, as well as whether it's bone-in or boneless. Another possibility: are the ovens in question actually at the temperature they say they are?

Very good points!  I didn't think to measure the temperature of the actual ovens... both of them are very old and have the old dial on them... I'll try that.  Also, I'm going in very deep on the chicken (boneless) to the center.  I'll try to see what the reading is closer to the surface.  Thanks everyone!

Is the chicken straight out of the fridge cold or have you let it come up toward room temp for a bit (I try for 30 minutes)?
