This challenge is for anyone new to vegetarianism and veganism who would like to give it a try.

The scoring system: 1 point for each vegetarian day, 2 points for each vegan day.

Where do you get agave nectar? I keep hearing about it and want to give it a try.

I get mine at Walmart. It's usually in the Baking aisle. I also use it as a gel for races/ longer workouts. I get a 6 oz. gel flask(I got mine from Performance Bike) and put 1/2 tablespoon of 100% cocoa then fill it with agave nectar and stir it up. In the long run, it's cheaper than buying gels in the packets. On the bike, I just use straight honey.

I use unsweetened almond milk, but I do put just a lil' bit of mozzarella on my morning omelette(along with 1/2 an avocado and some green chili salsa, now I'm getting hungry!) This will be tuf going vegan on rest daze!

So... does anyone here know how to make/put online a spreadsheet for this challenge? I know I should have these skills since I started a challenge, but you've got to start somewhere right?? I can make a spreadsheet, but I don't know how to post it online.

Maybe set it up so we can put in points for each week rather than each day, otherwise the spreadsheet will get too wide.

Great start! What's on the menu today?

Today is vegetarian only for me because I am doing a dairy free thing where I eat dairy day 1 (today), go dairy free for 10 days, then reintroduce dairy for 3 days. I am testing whether I am sensitive to dairy or not... I'm sad to say I think i know the answer though. I set it up so dairy is reintroduced for my birthday! Mmm.

April Fool's Day was a veggie day for me.

Pan-fried (sauteed?) tofu

Pancakes made with mix, but added yogurt, oil and soy milk for the protein/fat. They were so delicious I didn't have to add anything to them.

I'm kinda sick so that's all I ate.

Oh, tea. Lots of tea. And candied ginger.

Vegetarian day for me. Breakfast was an egg and veggie wrap after my workout. Lunch was a spinach salad with veggies and chickpeas. I had popcorn and carrot, apple, and celery juice as a snack. Dinner will be cheese pizza and red wine :-)

is it too late to join the challenge?  my diet is mostly plant based, but definitely not vegan.  at one point in my life i was completely vegetarian, but am now a little more pescatarian who occasionally dabbles in poultry.  Wink

 

anyway!  my point is that i'd like to transition to as vegetarian as possible (for me) ... this seems like a good place to start!

breakfast: nature's path optimum blueberry cereal, milk

lunch: omelette w/veggie "sausage," guac, onions, salsa.  iced tea

dinner:  quinoa/wheatberries tossed with chard, new potatoes, onions, tempeh.  broccolini.  blood orange sorbet for dessert!

Oops - I thought today was the start of the challenge.  Luckily I was on a hut trip w/ lots of vegans & vegetarians over the weekend.  I had buffalo chili, tho, yesterday while we were waiting for I70 to reopen.   I'll go post my points now.  Looking forward to this!

Today: vegan smoothie for breakfast; almond butter wrap for lunch; orange for snack.  Just gotta stay away from the cheese tonight!
