I don't get too fancy with it, but use it as the basis of my lunch a few days / week.
I mix 1/2 cup uncooked quinoa, 1.5 cups of water, some dried onions and garlic powder, and for some variety use one of the following:
a ) a heaping tablespoon of Patak's curry paste
b ) a few good shots of red wine vinegar
c ) few shots of balsamic vinegar
d ) a few squirts of concentrated lemon or lime juice
I nuke it in the microwave until all of the fluid is absorbed (15 minutes or so ), then add some tufu and chopped veggies or sweet corn, garbanzos, etc.
I find these combos to be tasty and satisfying, and they keep me going when I postpone dinner and go for an after-work ride.
