So, I'm a miserable, miserable person without my coffee in the morning.  I already knew that I couldn't have anything to eat or drink after midnight tonight  - fine.  But I just got my surgery time - surgery isn't scheduled until 1 pm. 

What the HECK am I going to do with NO coffee all morning????  Don't get me wrong, I get it.  I don't want to be puking during surgery...  but 1 pm???  Don't these people realize what a witch I am my 1 pm with no coffee???

Oh noooooo! Oh well, they will just suffer the wrath of Rhoda when you get there then!

Ran a routine hill run a different (harder) way today where all the climbing was continuous and opposed to shorter hill repeats i usually do. Good to Get the legs in a longer climbing zone . Its a busier route and it was fun to run past the walkers huffing and puffing and keeled over in agony of the relentless uphill. Then again perhaps they had yet to get their cup of Fivebucks Java

Hey all - just wanted to share one of my favourite recipes ... I'm having a friend over for dinner tonight, and it's an old standby that's always a crowd-pleaser, I've been making it for so long now it's my "signature" dish:

Spinach Lasagna Rolls:

Boil 8 lasagna noodles (I do 9 cuz I always break one)

Saute one onion and 2-3 cloves garlic. When soft add 10 oz spinach to wilt. Place in large bowl to cool.
Add 3/4 cup Ricotta cheese, 1/4 cup Parmesan, and 1 egg white. Mix well.

Lay cooked lasagna noodles on flat surface and spread 3 tbsp spinach/cheese mix on each one. Top with shaved ham (I find 150g does the job perfectly). Roll up, place in baking dish.

Top with can of stewed chopped tomatoes. Add tomato paste for thicker sauce. Bake at 400 for 15 min covered in foil, 5 more min uncovered.

I love this dish because you can do all the prep earlier in the day, then when company arrives throw the tomato sauce on top and throw it in the oven. It takes longer to bake out of the fridge (more like 30-40 min) but it's still delish!

I do the same thing! I plan meals for the week, I'm so anal I write down my meal plan instead of a grocery list, and follow that at the store! ... glad I'm not the only one. ;-)
And yes, I did not mention these are best served with a side salad.

Glad its not just me! I decide on meals and write the list from that, then write the plan on a board on the fridge too, ha ha

Seriously though, if I didn't do that then we would end up with either no food, the wrong food, too much food....and I don't have time in the week to worry about that stuff! My husband makes fun of me for it but I know he appreicates it.

Yoga class today....haven't taken a formal class in a very long time.  It was okay, there were only 3 of us in the class so the instructor had a good bit of time to make sure our poses were okay.
