Okay, back to work so I can sneak out early. It is too nice to be inside today.
I work 10 hour days and it sucks to watch the whole day go by this time of year. When I go to work it is dark and when I get off it is dark.

Kim - I hear you there.  I am not a great swimmer but there are some out there a whole lot worst.  I always play the negative side unfortunately and wish I could be like the great swimmers - they make it look so easy!

But then again I might make it look so easy to someone else and I think they are crazy


Yep, even I was called a fast swimmer once. Of course it was from a 80 year old woman ....but still!!!

Hello All!!!

I'm back for a brief time. We got an hour and a half today for lunch instead of an hour. Which really means I have an hour and a half to do 5 hours worth of work without actually having a lunch break.

No worries though. I've got 4 hours and 17 minutes left in my work week then I AM OUTTA HERE!!!!!!!!

I'm not telling the kids I'll be home tomorrow morning, they'll be surprised. I'm planning on making a big breakfast before I get them on the school bus. I won't see them then until I get back. To me that sounds much better than having to say good bye's tonight because I usually leave the house around 4:45 to head to work.

I CAN'T WAIT FOR SUNDAY TO GET HERE!!!!!!!!!!!!!

You take a can of something: beer, lemonade, orange juice, tea, whatever, and you sit the chicken on top of the can. You can then cook the chicken in the oven, or even on the grill, if you have a large enough grill (this is my preferred method although last night I just used the oven). As the liquid evaporates it rises up through the chicken providing yummy flavor and leaves you with a very juicy end product instead of a dry bird.

When I do it I generally use between a half and 2/3 full can of liquid, you really don't need a full can. I also have a little holder that I sit the can in and it holds the can and chicken nicely. I also rub some seasoning inside of the chicken, and pour some in the can. I also coat the outside of the chicken as well, last night I used Creole rub. I've used Old Bay, Poultry Seasoning, and Lemon Pepper as well, but whatever you like. That's it, pretty simple. Try it, experiment, enjoy.

If you try this and you would use beer, I recommend only half a can and maybe water it down a little. I have found beer to create a VERY strong beer flavor in the chicken.

well wishes on the travel and race Ann(e).  I cannot believe it is here already.  We discussed this in our first challenge month didn't we - seems so long ago

My sister swears by a brine for poultry, but I have found this to be just as good, if not better IMHO. Very juicy indeed.

If you do a google search you will find all sorts of different liquids and seasonings that people use.

I think the recipe link says to bake for 3 hours, but that's not always the case. Mine last night was done in less than an hour and a half.

I remember those days - now I get can I have a ride and a couple of bucks to go see my friends.  I was warned these days were coming but I didn't believe them.  Enjoy them while they are like that Ann(e)!


My son is 9, I know that these times won't last much longer but I'm hopeful. He and I have always had a very strong bond. My son will give me hugs in public, but not his dad. I hope he never outgrows that.

My daughter on the other hand is attached to my hip. I can't sit down in the house without her sitting beside or on top of me. I have a recliner, they all know that is Mom's chair. If I'm in my chair my daughter is there with me. I keep saying soon we'll have to get one of those extra wide, recliner and a half's or whatever they call the thing.
