They're probably still nutritious, just not as "healthy."

When I get back, I'm going on a quest to get the family to eat veggies (they've survived this semester on meat and starch), so while I'm living alone, I'm trying some new ones out myself.

Beets will be a no go.

I was told that the Pet Food companies used to add lots of beet juice to their dog foods, then people started complaining that their pets were turning pink. LOL)
