It rained this weekend and kind of got cold, so I cooked soup, and then today it got warm again

Send it over. What kinda soup?

Oh it's really simple...  It's like a tomatoe soup with Corn and Beef (not corned beef)

Boil Water (like half a stock pot) - You could probably cut the recipe in half easily.
Add tomato sauce (2 12 oz cans)
Add Cubed Beef (ie Stew meat , about 1lb)
Add Onions (I buy the pre-chopped frozen, 1 bag)
Bring to rolling boil
Add two cans crm style corn
Add two cans whole kernal corn
Add salt, parsley, green onions (1 bunch)
Bring to boil again and let cook down a little until of good consistency
Season Some more to taste

I serve mine with rice, but then, that's just what us southerners do...
Hubby likes crushed crackers

I made the yummiest dinner tonight - just had to share the recipie!

LOW FAT ALFREDO SAUCE
---------------------

  1 tbsp. butter (butter)
  1/4 c. flour
  1 tsp. salt
  Pinch nutmeg
  3/4 c. grated Parmesan cheese
  3 c. low fat milk
  1/2 tsp. pepper
  Cooked fettuccine

Melt butter-butter in saucepan over medium heat. Add flour;
cook, stirring, 1 minute. Whisk in milk, salt, pepper and
nutmeg. Bring to a boil, whisking; reduce heat and simmer,
stirring occasionally, for 5 minutes. Toss with Parmesan
cheese and cooked fettuccine.

I also threw in some diced chicken - it was a hit!

That nutmeg makes all the difference.

My mom used to make an awesome cream sauce like that (yeah, lowfat)! Remembering that brings a smile to my face.

It tastes REALLY good on cauliflower, too, btw. And I hate vegetaburrs.

This is a portion of my Monday at work. From my blog:

Since today will have no training in it, let me share with you one of my experiences today at work. My boss had warned me about some guy who has recently joined the Y and has been swimming in his underwear. Friday I saw him and it was hard to tell, but yes, he was swimming in black under armour boxers. Boss told me today that he hadn't had a chance to talk to the guy yet, but to let him know if he shows up. Today Underwear Guy comes into the pool and once again pulls his what look like swim trunks off to expose (gasp!) tighty-whiteys!!! I don't get this. I am soooooooooooooo uber self-conscious that I freak when the elasticity is shot in my suits, let alone swimming in white, un-lined underwear. The guy gets out of the pool and immediately wraps a towel around his see-through self and proceeds to pull his trunks back on and leaves. So he must realize that everyone can see his junk. That everyone is given no choice but to see his junk. Boss told me not to say anything unless he parades around the deck. He doesn't, but come on. Tighty-whiteys? Am I just that much of a prude? Bleck.

I hope this isn't setting the tone for the week


BTW, it could be worse... One day while I was swimming, a guy in the next lane was... um... well, he MIGHT have had a really bad itch. But I doubt it.

I did not stay around to see what happened after that. I just felt the need to get OUT of the pool, and take a LONG shower. With soap. LOTS and LOTS of soap.

All in all, I preferred the cockroaches to that.




OMG. Yes. That would be worse. Much worse. Ewwwwwwwwwwwww.

Yep, that sounds like "happy jack".  He did move away a few years ago, I wonder if he moved back east?  Of course "Happy Jack" would at least get into the hot tub and turn the jets on to be somewhat conceled.
