I was just thinking about that last night. I'll let you all know if I come up with any good ideas for dinner tonight... perhaps this.... Ingredients 1 (15 ounce) can black beans, rinsed and drained 1 cup cooked brown rice 1 small onion, finely chopped 1 egg, lightly beaten 6 tablespoons salsa, divided 1/4 cup reduced-fat sour cream 4 lettuce leaves 4 slices reduced-fat Cheddar cheese 4 hamburger buns, split Directions In a large bowl, mash beans with a fork. Add the rice, onion, egg and 2 tablespoons salsa; mix well. Drop by 1/2 cupfuls into a large nonstick skillet coated with nonstick cooking spray. Flatten to 1/2-in. thickness. Cook over medium heat for 4-5 minutes on each side or until firm and browned. In a small bowl, combine sour cream and remaining salsa. Place a lettuce leaf, burger, sour cream mixture and slice of cheese on bun. |

I've been thinking about what kind of baking I want to do for the impending holidays. Does that count? Absolutely. Funny thing is I've been thinking about how much running I'm going to have to do to make up for my wife and mom's baking over the holidays! Why do the holidays have to taste so damn good... seriously. why do they. the Y has a HOLIDAY DONT GAIN MAINTAIN incentive program that i did last year. amazing how that little bit of incentive helped to keep me on track. its SO easy to eat the food and takes so MUCH EFFORT to work it off. why is that?? Ingredients 1 (15 ounce) can black beans, rinsed and drained 1 cup cooked brown rice 1 small onion, finely chopped 1 egg, lightly beaten 6 tablespoons salsa, divided 1/4 cup reduced-fat sour cream 4 lettuce leaves 4 slices reduced-fat Cheddar cheese 4 hamburger buns, split Directions In a large bowl, mash beans with a fork. Add the rice, onion, egg and 2 tablespoons salsa; mix well. Drop by 1/2 cupfuls into a large nonstick skillet coated with nonstick cooking spray. Flatten to 1/2-in. thickness. Cook over medium heat for 4-5 minutes on each side or until firm and browned. In a small bowl, combine sour cream and remaining salsa. Place a lettuce leaf, burger, sour cream mixture and slice of cheese on bun. That sounds really good, but I'm not usually allowed to eat beans at home ![]() TMI!!! For burgers, I am usually lazy and nuke boca burgers, but I will give this one a try. I think I have everything listed in the fridge/pantry. They don't affect me that way.
