Hmmm.  We haven't chatted about food for quite some time.  I don't know why.  I think about it constantly.

I was just thinking about that last night. I'll let you all know if I come up with any good ideas for dinner tonight...

perhaps this....

Ingredients
1 (15 ounce) can black beans, rinsed and drained
1 cup cooked brown rice
1 small onion, finely chopped
1 egg, lightly beaten
6 tablespoons salsa, divided
1/4 cup reduced-fat sour cream
4 lettuce leaves
4 slices reduced-fat Cheddar cheese
4 hamburger buns, split

Directions
In a large bowl, mash beans with a fork. Add the rice, onion, egg and 2 tablespoons salsa; mix well. Drop by 1/2 cupfuls into a large nonstick skillet coated with nonstick cooking spray. Flatten to 1/2-in. thickness. Cook over medium heat for 4-5 minutes on each side or until firm and browned. In a small bowl, combine sour cream and remaining salsa. Place a lettuce leaf, burger, sour cream mixture and slice of cheese on bun.

That sounds really good, but I'm not usually allowed to eat beans at home If I ever get a weekend alone I will definitely try this out though.

TMI
!!!

Sorry Robin My mama always told me it was best to be honest.

Actually, I cannot throw any stones. however, black beans are a staple in our house. As are open windows........

That recipe looks fantastic and I "heart" black beans.  For burgers, I am usually lazy and nuke boca burgers, but I will give this one a try.  I think I have everything listed in the fridge/pantry.  They don't affect me that way.  Really, no they don't.  Wink

im a BOCA buger girl too, KIM.

but i was thinking this recipe is sooo easy, why buy em in a box?!

i love me a black bean, and im always 'tootin' anyways what w all the fruits and veggies im eating, my family will hardly notice a difference.

enjoy!

Good afternoon Ghoulies! Just a quick swing by before my next appointment to report ST session #3 done, along with a 3.4 mile run. Good times!

Tomorrow is a day off for us, so I'll be doing my 30 min tempo run on the hills of my neighborhood instead of the flats by my office. At least I get to use my own shower when I'm done

Hey, maybe I could take a page out of Ann's book and just sit around in a robe or something for a few hours before I get around to it. Sounds kinda fun now that I think about it!

Evening all. I am going to fix the ravioli for tomorrows (pesto, mozzarella) dinner then go to a friends for wine and OPF. In that order.
Tomorrow is a day off so I get to ride, get hair done, take dog to the vet (she does NOT know this yet) then RUN in my new shoes that came in today.

Have fun Ghoulies, I'll check in tomorrow.

Stac, just drop the sundae by, I'll snarf it down before going out for dinner

alright.

my friend that sent me the black bean rice burger recipe sent me another MUST TRY recipe:

BUTTERNUT SQUASH ENCHILADAS.

2 Large butternut squash
2 tablespoons cream cheese
1/2 teaspoon cumin
1/4 teaspoon ancho chili powder
1 tablespoon cilantro
2 tablespoons diced roasted chili peppers
1 tablespoons green onion, sliced
Pinch of salt
Four 6inch corn tortillas
1 cup enchilada sauce
1/2 cup shredded Monterey jack cheese

Halve the squash lengthwise and remove the seeds. Bake at 350 degrees
until soft, about one hour. Cool. Scrape out the flesh and drain in a
colander, using a few plates on top to squeeze out as much liquid as
possible. In a bowl, mix squash with cream cheese, cumin, chili powder,
roasted chili peppers, green onion, cilantro and salt. Taste and adjust
seasonings as necessary. Scoop the filling onto the tortillas and roll
them up. Place them seam -side down on an oiled pan. Cover with
enchilada sauce and top with cheese. Make sure the tortillas are
completely covered with sauce so they don't dry out. Bake uncovered at
350 degrees until the cheese melts and turns brown and the filling is
hot, approximately 15 to 20 minutes. Serves four.

i AM the queen of the recipes today.

those black bean rice burgers have me over the moon.

i just sent like 10 recipes over to my FB inbox.  LOL.

i had good curry tofu at the Salad Bar at the grocery store, so im on the 'hunt' for a recipe for that and came across all these other curry recipes that sound uber yummy too.

its not often that im in the mood to cook, usually i just go w my old standbys, but every once in awhile ill have this recipe/cooking JAG, and i try out a bunch of new things.

i cannot wait to try out these enchiladas.

i hope theyre as good as ive imagined them to be.
