grated zuchinni and or yellow squash, roughly 2 cups
can of black beans (I'm too lazy to soak and boil my own)
grated mexican cheese mix, roughly 2 cups
cream cheese, about a cup

Mix together the squash, beans, grated cheese and cream cheese.
Cover bottom of baking dish with a thin layer of sauce
Place on tortillas, add a splash of sauce.  roll the tortilla and place in the baking pan.
Once pan is full, cover with the remaining sauce, sprinkle more grated cheese on top. 
bake until bubbly and warm about 20 - 30 minutes, 350 degrees.

Quantities are estimated as I just make it up as I go along depending upon how I feel that day. 

YUMMY.  I am always looking for great ways to make my kids eat zucchii (they hate it)

Hey, you got it in though!  You must be spent from this weekend?  I am going to have to lower my goals.  I am leaving for Ireland Friday and forgot about that when making the goals.  I have three days left too do 6 stages and like 170 miles!

Yeah, fried is an understatement. They don't hurt, they are just dead. Even swimming was awful this morning!
