tortillas can of enchailada sauce grated zuchinni and or yellow squash, roughly 2 cups can of black beans (I'm too lazy to soak and boil my own) grated mexican cheese mix, roughly 2 cups cream cheese, about a cup
Mix together the squash, beans, grated cheese and cream cheese. Cover bottom of baking dish with a thin layer of sauce Place on tortillas, add a splash of sauce. roll the tortilla and place in the baking pan. Once pan is full, cover with the remaining sauce, sprinkle more grated cheese on top. bake until bubbly and warm about 20 - 30 minutes, 350 degrees.
Quantities are estimated as I just make it up as I go along depending upon how I feel that day. YUMMY. I am always looking for great ways to make my kids eat zucchii (they hate it) |
