I was just reading an interesting tidbit on the science of taste and it actually answered the question of why chocolate and salt "go together".

It turns out that we experience the four classic senses - sweet, sour, salty, bitter - relative to each other. In other words, if the food we eat has 6 molecules of sour for every molecule of sweet, we'll experience the food as six times more sour than sweet. So adding a dash of salt to chocolate actually enhances the sweetness of the chocolate because we experience the sweetness of the chocolate relative to the small amount of saltiness.

So, Cat, next time you bake chocolate chip cookies, add a dash of salt into the dough. It should enhance the sweetness of the cookie.

Did you know there's actually a fifth taste?

Those cookies are so delicious.  I am going to have to stop eating sweets and be better about my diet.  I'm going to be in my cousin's wedding and I'd like to lose a little more weight before then.

Last post, Really

This morning one of my classmates fell asleep during a lecture(lectures in this class are fun).  The prof had him go outside to run laps until he would be able to stay awake.   

I am going to pick him up a frapp when I get my grande soy latte with a half shot of espresso and a bit of sugar.  I accidentally got a normal soy latte the other day and I was shaking for 6+ hours after drinking it.

When I was a teacher I used to have the kids make maps of their tongues (they were 10, don't make it dirty ).  They would have to taste 4 different substances by dabbing it on their tongues and figure out where the receptors were for each of the different tastes because they are actually on different parts of your tongue.  It was very cool!

You taught them right at the time.  Like how I learned that Pluto was a planet and there were only 5 oceans.

BTW, I love that taste lab.  It's fun.  And also horrible.
