Walnuts are a giant pain to get opened. We have walnuts here and I leave them for the critters. I prefer the english walnuts anyway. They have a milder flavor. The walnut pie was an experiment my mom did years ago. Everyone prefered it. I cut back on the sugar and double the nuts. YUM!!
Now I am hungry!

I was going to do a Turkey Trot with stepdaughter & son in law.  But I am not sure that they are really going to do it.  Also my brother in law has asked us to come so I don't know if we will leave Wednesday (no Turkey Trot) or after the run on Thursday morning.  I don't know if we would come home Friday, Saturday or Sunday.  I also have no idea when my stepdaughters want to have Tday with us.  It is rarely on the actual day.  So who knows what we will be doing!

Yumm walnut pie sounds good.  I like pecan pie, but walnut might be a nice change.  And I have a killer recipe for sweet potatos.  Maybe I will post it later.  Now I am off to work, lunch with a friend, the grocery store, and hopefully a run before dark.

I found this for a walnut pie

Ingredients

  • 3 eggs
  • 2/3 cup white sugar
  • 1/2 teaspoon salt
  • 1/3 cup margarine
  • 2 (1 ounce) squares semisweet chocolate
  • 1 cup corn syrup
  • 1 cup chopped walnuts
  • 1 recipe pastry for a 9 inch single crust pie

Directions

  1. Melt the margarine and the chocolate together, stirring until chocolate is smooth. Add eggs, sugar, salt, and syrup. Stir until everything is mixed thoroughly. Stir in walnuts. Pour into unbaked pie shell.
  2. Bake at 375 degrees F (190 degrees C) for 40-50 minutes, or until pie is set. Let sit for 30 minutes before slicing.

Here is a recipe for a chocolate-walnut pie

  • 4 ounces semisweet chocolate
  • 1 unbaked 9-inch pie crust made fromBasic Pie Pastry
  • 3 large eggs, lightly beaten
  • 1 cup light corn syrup
  • 1 cup sugar
  • 2 tablespoons (1/4 stick) butter, melted and allowed to cool
  • 1 teaspoon vanilla
  • 2 cups broken walnuts

Garnish (optional)
  • Whipped cream

Preparation

Preheat the oven to 350°F.

Melt the chocolate in the microwave or in a heavy pot on low heat. Pour it evenly into the unbaked pie shell.

In a large bowl, mix the eggs, corn syrup, sugar, butter, and vanilla well. Stir in the walnuts. Pour the mixture into the chocolate-lined pie shell and bake until the filling is set, 45 to 50 minutes. Remove to a rack and let cool.

The pie may be made ahead several days, or frozen for up to 3 months. Serve with whipped cream if desired.

I think my in-laws used to tell people they could stop there. I don't like people I don't know coming into my yard and helping themselves. It wasn't in my in-laws place to give people permission.

I had an aunt ask me if she could come get some one time. I don't really care for her. I used to do computer work for her. At the time I chared $25 an hour. I spent a lot of time on her computer and I never charged her a dime. They have bees and make things with honey including honey candy. The candy is great for scratchy sore throats, especially for kids. I was leaving her house one day after working on her computer and asked her if I could have a bag of the candy, she charged me for it. I never did work for her again. I also knew she wanted to come get the walnuts so she could bag them and sell them at a craft show. That irritated me a bit. She came out to the house, but I don't think she didn't get many. The in-laws got most and we mowed over what we didn't feel like picking up anymore. Plus my lab was not quite a year old and was REAL excited to have someone in the yard to play with. The polite thing to do would have been keep her in the house, huh?

Freezer section of the store, by the pie crusts. Ours has them in the chilled section by the milk/ cheese as well. Again, with cookie dough and pie crusts. I love cheese sticks made with those.

Well I did a swim/bike/run. I feel pretty good about myself...this one guy said I had the fastest kick he had ever seen...he ws pretty good looking too. Haha. I did the set I set out to do. Then was going for a bike on the spin bike but they were all being used, so I did a 1mile run before doing a 30min spinervals session (I have a few on my ipod). Now I am going to get ready with my jeggings and shirt and heels to go to my friends bday dinner!!! INDIAN FOOD YUM YUM YUM!! Butter chicken, and naan and kheer and saffron rice...mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm :D
