Up top girl I'm a rare steak eater too.  Cool red center for me thanks.  I hate when waiters try and explain what rare means to me.  Hey jerkwad I know what I ordered, I don't need it explained to me.  Do I look like this is my first time in a Steakhouse?

It's a good way to enjoy a steak.  If it's even a tad cooked looking on the inside I am not happy.  I just say I want it to "moooo" when I cut into it.  Then they drop the "explaining the rare" spiel. 

Yes indeed.  Give me a bone in filet mignon black and blue please, and a iceberg wedge salad with Bleu Cheese.  I've found that if I use the term "black and blue" they catch my meaning alot better.  Unless its their first day on the clock and then I have to educate them.....

I get that, I really do but c'mon look at me.  I typically sport a 'Stache that would make Tom Selleck himself swoon, normally a cowboy hat, I stand 6'4" and weigh 220, I am an unmistakable carnivore....I know my way around a steak.....

Steak question.  How much does the cut usually cook after you bring it off the heat?  My better half likes to grill it to the point of "medium well" then wonders why it is over done once we eat it.  I cook it until it is almost there and then let it rest off the heat.  Though somtimes I have taken it off the heat too soon and was more rare than medium.
